No-knead is a simplified method for making bread. The author offers several recipes for dough and some items to go with the breads. There is one major flaw, the author does not list weights for ingredients. He seems to realize that a cup of flour does not always contain the same amount of flour by weight. For successful bread dough a proper ratio of flour to water is critical. The only way to keep it consistent is to weight the ingredients. If the author did not want to provide a weight formula for the various doughs, he should have at least indicated what he considers to be the weight of a cup of flour for each type of flour that he uses.
I love Steve Gamelin's books and youtube videos. I have been using a bread machine to make pizza dough for years but his method of making an artisan no-knead dough is so simple and makes a delicious crust and has me thinking that, when my current bread machine dies, I won't be getting a new one.
