**Use & Care**
Wash Ironwood Gourmet products in warm, soapy water and thoroughly rinse with clean water. Do not soak. To dry, prop up off of counter to allow all surfaces to air dry evenly. Wood products should never be washed in the dishwasher.
After drying, rejuvenate and protect the wood by rubbing it down with Ironwood Butcher Block Oil. Apply the oil liberally and allow it to soak in thoroughly before use. Regular application of our Butcher Block Oil will prevent cracking and preserve the rich natural colors of the wood.

This cutting board is end grain and the wood surface holds up well to a fair amount of knife activity. It is a bit small for my liking, but I'd also think a full sized butcher block is too small. I guess I'm just a space hog.
Anyways, it serves it's purpose well and is at a reasonable price. It won't replace my Boos block any time soon, but I don't think it's marketed towards doing that.
Be sure you oil this regularly every couple of weeks and dry it well after washing it, otherwise the wood will warp. The older one I have is now a concave shape, but it still works fine in my vacation apartment.
The rubber feet on the bottom are cheap, and you should just take them off from day one so you can use both sides of this. Without the rubber feet (which will fall off on their own after a couple uses anyways), simply put a dish rag underneath the board to stabilize it. Easy fix.
If you're looking for the best cutting board in this price range, this is probably it. If you can afford a bit more, go with a larger Boos Block and live without regret.
When I got it, I sanded it down to 220 grit and put 6-7 coats of tung oil on it. Once I got it nice and sealed with the tung oil, I put two coats of finishing wax on it. I also had to replace the little rubber feet as they fell off almost immediately. With a little work, this cutting board can be a beautiful addition to your kitchen. Just don't expect it to be ready to use out of the box.
This board was/is my main daily driver for all things cutting: vegetables, fruits, raw/cooked meats, cheeses, anything food basically. The first thing I did when I got this board was to take off those useless dinky rubber pads (don't even call them feet) at the "bottom side" of the board. They came off fairly easily and I only had to scrape off a little bit of residual glue. The reason for this: I wanted to use this board for both raw and cooked food, but obviously I want to keep the surfaces separate. So instead of buying 2 boards, I designate one side for raw meats and the other side for cooked. Worked out great and I would recommend that to those looking to buy this board to do so even if you only plan to use one side (those pads don't do anything to lift the board or stablize it anyways, use your own solutions like a towel or bigger rubber feet).
Secondly, I tried to maintain my board regularly but I know over the years I've neglected it quite a few times due to laziness - sometimes going months without oiling it (the horror!). Nevertheless, I always wash this board in hot water and scrub with coarse salt only. There were only some occasions I used detergent just to make sure I clean it. After washing I put it on a wire rack to air dry. Living in a house with forced-air heating helps with the drying as most of the time by next morning it's ready to go again.Read more ›
When my gorgeous Ironwood Gourmet Acacia Wood cutting board arrived it was dry and a little sticky. Thanks to the great reviews, I wasn't worried! I gently washed it with Dawn dish soap and warm water and laid it on an open-design trivet (so air could get all around it) to dry completely. After a couple hours it was dry, so I started oiling.
Based, again, on other reviews I had purchased a bottle of mineral oil from the grocery store. I think it was $1.99 for 16 ounces, and I found it in the laxative aisle of the pharmacy, go figure lol. Anyway, I put a generous coating on one side and all the edges, waited an hour or so, then flipped it over (still on the chrome trivet) and generously oiled the other side. It took about a week of doing this a couple times a day, but my cutting board looks just like the picture and is performing perfectly! Granted, I may have gone overboard with the oiling, but it was worth it to me not to have it warp. Now I just spread a little mineral oil on it every week, and I expect to reduce that soon.
As far as performance goes, it's nice and thick, heavy, and doesn't really slide while I'm using it. Should that happen, I'll just throw a dish towel under it. Oh, I removed the little padded non-slip things first thing. Surprisingly, they were attached pretty well, but I wanted to be able to use both sides.
If you're willing to invest a little time and patience in the beginning, then care for it properly, I highly recommend this beautiful cutting board.
