This knife is replacing our current 3" paring knife because we use it all the time, and I did it no favors with home sharpening. I recommend finding a local culinary or cutlery shop to have them professionally sharpened.
The Handles are the best feature that lends to longevity of this design, with no seams and no rivets. The only seam is at the bolster, where the blade meets the handle. Most knives that have rivets or seams tend to get water between the seams and cause dry rot of the handle and rust to the steel.
The Four Star II's look like a nice knives as well; my only concern would be with the additional seam at the tang.
This Henckels, which we bought almost four years ago, has become the paring knife my wife and I always reach for, and I'm going to buy a second even though the price has gone up close to 40% -- thank you Germany.
The heavy weight of a forged blade is fatigue-inducing in a 10 inch chef knife or butcher's chopper. But for a paring knife the extra weight and strength are nice.
The handle and blade withstand the dishwasher extremely well and don't discolor or lose the edge -- which is important. People SHOULD use the dishwasher for their knives because handwashing sharp steel is risking cuts - it will happen.
I cannot speak to this knife versus the comparable one from Wusthof; all I know is this is a very comfortable working knife for our household. And I suppose forty bucks isn't that much of a splurge for a blade that's going to be around longer than we will.
Henckles has started making some of their lesser quality knives in China , I avoid those.
These knives (Henckel's 4 star line) are made in Germany of high carbon steel.
These knives hold an edge fairly well and are extremely easy to sharpen on a flat stone.
