This really is the missing ingredient to all of your attempts at making traditional japanese food! It may seem odd that fish is used as a "spice", but it really almost is just that. I tried making steamed japanese vegetable with mirin & soy sauce figuring that Mirin was the missing ingredient. But it wasn't until I read on one of the packages that hon dashi is required, that I discovered the true missing ingredient! I bought fresh miso to make miso soup, and it too didn't taste right. Added a spoon of hon dashi and suddenly I had real Miso Soup! (actually i found out later you can buy fresh miso for miso soup with the dashi already added) Hon dashi is great for soup stock for udon or soba too. Buy some and add a little to whatever doesn't taste quite japanese enough.

this is the only low salt dashi I have found and it's perfect. 1 table spoon of this ,one of soy sauce,one of mirin and two and a half cups of water and you have a great soup stock.

This product is the base for Miso soup, but is also useful for other soups and sauces. A little goes a long way, as 1 1/4 tsp is all that is needed for 3 cups of water for Miso soup. We like Miso and other oriental soups and sauces and this Hon Dashi Bonito Soup Stock is essential for many Japanese favorites. I would recommend it to anyone liking Japanese cooking, or oriental cooking in general.

Do you know what is missing from your miso soup? This. I can put a spoon of miso, a dash of this, and a little dried wakame in a mason jar and use the hot water machine at work to make instant soup that is much better than the powdered packets.

This is an ingredient that I can purchase at my local Asia Market but it is, of course, much more expensive there. I like the convenience of it coming loose in the jar so that I can use just what I need rather in packets where I may only use a portion of the packet and either throw out the rest or tried to close up the packet and toss it in the cupboard. This is just much better for my purposes.
