Sugar Free Instant Pudding

I have a Dash mini pie maker. In 10 minutes I can whip up a box of sugar free instant pudding for the fridge and 'bake' 4 mini pie crusts. I use Pillsbury pie dough and each round of dough makes 4 pie crusts. Just perfect for 1 box of pudding. I also cook 2 cups of frozen berries on the stove with 1 tablespoon of lemon juice and 3 tablespoons of Swerve Powdered Sugar replacement. Cook stirring often until juice coats back of spoon. Refrigerate and use as topping on mini pies. Yum!

Am a little put off by how expensive this product has become. I will just use it less often. This time I added cooked rice which made a very interesting rice pudding. Since I don't use whole milk, I use coconut milk - the floor was even more intruding although the pudding didn't set as thick as it should. No problem eating it! No sugar version good for diabetics. Will buy again when it's on sale. Some of the prices here re ridiculously over the top.
