A Popular Indian Recipe is Jeera(Cumin) Rice

Ingredients:

Ghee or Butter, whole spices bay leaf, cinnamon, cloves (Check out Jiva Organics brand spices for best quality and taste)), cumin seeds, green chillies, basmati rice and freshly chopped coriander and water of course. The perfect rice to water ratio for jeera rice is 1 cup of rice:2 cups of water.

Method:

1. Wash the basmati rice twice, and then soak it in water for 30 minute so that the rice is completely soaked.
2. Drain all the water from the rice and set the rice aside.
3. Heat ghee in a pot and add the whole spices and cumin seeds to it. Once the cumin seeds start spluttering, add chopped green chili and drained rice to it. Saute the rice in the pan for two minutes on a medium flame.
4. Add two cups water and salt to the rice and mix well. Bring the rice to a quick boil, and then reduce the heat to a simmer. Cover and cook for approximately five to six minutes, till all the water has evaporated and the rice is cooked through. Top with chopped coriander and serve hot.

Cumin Cauliflower Soup with Crunchy Chickpeas

Ingredients:

Soup:

1 tablespoon olive oil, 1 onion (peeled and sliced), 4 cups vegetable stock, 2 cups cauliflower florets, 1 large baking potato (peeled and quartered), 1 teaspoon cumin (or more to taste), 1/2 teaspoon garlic powder, 1 cup milk, Dash of salt and pepper to taste

Crunchy Chickpeas:

1 can (approx. 15 oz.) chickpeas (drained and rinsed), 1 tablespoon olive oil, 1/2 teaspoon cumin, 1/4 teaspoon garlic powder, Salt and pepper to taste

Method

Add the olive oil to a large soup pot along with the peeled and sliced onions. Saute until the onions begin to color. Raise the heat, add the stock, then the potato, cauliflower, and cumin. Bring to a boil, cover, reduce the heat to low and simmer for 25 minutes. Puree the soup. Add the milk, salt, and pepper.

While the soup is cooking, combined the drained and rinsed chickpeas with the olive oil, cumin and garlic powder. Spread them out on a baking sheet and roast in the oven at 400 degrees for 20 minutes. Season with salt and pepper.

Refreshing Cumin Drink

Ingredients:

1/2 cup mint leavea, 6 tablespoon lemon juice, 2 teaspoon black salt, 8 cup water, 2 tablespoon cumin seeds, ice cubes as required, 1/2 cup coriander leaves, 2 tablespoon ginger, 4 tablespoon sugar, 1 pinch asafoetida, 2 tablespoon tamarind seedless, 1 teaspoon salt

Method:

Clean and wash the mint and coriander leaves. Then finely chop the leaves.

Add chopped mint leaves, chopped coriander leaves, seedless tamarind, roasted cumin seeds, chopped ginger in a blender jar along with asafoetida, salt, black salt, sugar, and lemon juice. Next, add 4 cups of water in the jar and blend the mixture until all the ingredients are completely blended together.

When done, strain the mixture into a bowl and discard the roughage remaining of the mixture. Meanwhile, arrange the glasses on the clean and dry counters.Pour the mixture equally in the glasses and also pour the remaining water in the glasses, mix well. Also, put the 2-4 ice cubes in the glasses. Serve immediately.
