Ethan Becker is the son of Marion Rombauer Becker and the grandson of Irma S. Rombauer, the original author of The Joy of Cooking. He attended Le Cordon Bleu in Paris, but learned how to cook from his mom. An outdoors-man, he is a master of the grill and at cooking game. His outdoor gear and survival and combat knives are sold internationally under the brand Becker Knife and Tool. Ethan and his wife, Susan, a writer, editor, and artist, live in East Tennessee at their home, Half Moon Ridge.

The Joy of Cooking is like a cooking bible. The About sections teach you WHY you are doing what the recipes say, which helps turn you into a good cook. All of the recipes come out tasting wonderful. I’ve had many compliments on my pie crust, and it’s just a basic pie crust recipe from the Joy. I will never be without a copy of the Joy of Cooking and have gifted a copies to other family members and to each kid that leaves home. I feel like without knowing The Joy of Cooking you will never rise to the level of excellent cook. I have an entire bookcase full of cookbooks but find myself using The Joy of Cooking and the James Beard cookbook exclusively when I need a recipe reference.

I have used the Joy of Cooking cookbooks since I was married on April 4, 1959. I have learned to can, make jelly and jam, how to test the fruit juice for the amount of pectin in it, how to make fritter batter, banana cakes, and even how to handle venison and other meats, and many other things all from the instruction in the Joy of Cooking. This cookbook doesn't just give you the list of ingredients you need to make the recipe but it tells you how to do it, what to do, what not to do, how to correct a problem, etc . Many of the recipes give a short commentary on the recipe under it's title.
This Joy of Cooking has become my standard wedding gift for a new bride. I received my copy from an elderly lady with whom I worked. It was her habit to give new brides one of her own personal cookbooks. The one she gave me was The Joy of Cooking, thus I have made her tradition mine now.

Must-have Classic Cookbook

This is a re-release of the 1975 edition, which is familiar to many people. The print is a bit light in some places, but quite readable. The comb binding helps the book lie flat on your counter or open neatly in a book rack. I have worn out two used copies, so getting a brand new copy was ideal for me.

Julia Child says if she only had one cookbook, this would be the one; that's good enough for me. This is way more than a recipe book, like most others of the genre. If you have never cooked in your life, there is enough info in this book to teach you how to prepare most anything, step by step. I've owned a copy of this book for 40 years, and wouldn't be without it. Oh, I forgot; I'm only a man with very limited culinary talent and/or imagination. :-)

If you learned to cook out of the old version of Joy of Cooking, this is the one to have. The hardcover edition tends to have the binding fail fairly quickly with use, and the paperback edition is to flimsy for use as a go to cookbook. This is the last edition put out by the mother daughter team that created the original Joy of Cooking, the new one is heavily revised by the daughter's son, has very little in common with the old version, and in my opinion is greatly inferior to the older version.

This book has failed to survive the test of time. The content is almost unreadable. The text is small, dense, wordy, and poorly organized. It assumes the reader has a high level of experience in the kitchen... And, that one has ALL DAY for prep and execution of extensive recipes.

This is not a book for those that want simple, quick and useful meals. Very few busy professionals would have the patience to use this book. If you order used, the chances are you will get the wrong edition.

Avoid. Please, let this book die.
