Joyce Chen 'Unlimited' Scissors
Joyce Chen 'Unlimited' Scissors have been used and recommended for over 30 years by professional chefs by professional chefs, horticulturists, and crafts people everywhere - Joyce Chen Scissors for Gardening, Seafood, Home - have been featured in Weight Watchers, Food and Wine, and Country Living and Gardens Magazines as the most versatile household, garden, and kitchen tools available.
These scissors can be used to cut just about anything. They can cut through bone for poultry and fish. They can be used in the garden, the possibilities are really quite unlimited. The carbon content in the steel is doubled or even possibly tripled compared to normal stainless steel scissors. Molybdenum (which aids in corrosion resistance) and Vanadium (which helps to stabilize the steel during production) are added while increasing the carbon content to achieve the extreme hardness without making the stainless brittle. This simply means the scissors can be used to both cut hard objects in the kitchen and the garden, like bones or stems while maintaining the sharpness of the scissor longer.
They are perfect for use in the kitchen, in art or craft projects, and for tasks large and small around the home. The exclusive soft flexible handles eliminate pressure points making them perfect for anyone with arthritis, carpal tunnel or weak hands. The ingenious design makes them comfortable for right or left-handed use.
Joyce Chen's slogan 'Eastern Cookware for the Western Kitchen', reflects her focus on providing high-quality, versatile tools and products that have Asian flair, but can be used in a western kitchen. Joyce Chen opened her first restaurant in Cambridge, Massachusetts in 1958. The restaurant flourished, and in 1973 a larger Cambridge restaurant was opened. Chen also began writing Chinese cookbooks and in the 1970s began hosting a cooking show on public television. She found that the selection and quality of Chinese cookware in America didn't live up to her high standards so she developed her own. Today, Joyce Chen Products come from all over the Pacific Rim to bring the best of Asia to you.

Top Customer Reviews
This is my second pair, because my husband used my first pair for cutting out the fins and flashing of a radiator, and pretty much ruined them. However, he liked them because he could get them into the tiny spaces. However, if this is your intention--BUY YOUR OWN PAIR!
My second pair is off limits. Eventually I might find someone who can actually sharpen shears properly and have my first pair resharpened. Although they work well enough for kitchen use, it would leave my 2nd pair open to my husband snitching them again, since I keep my bench neat and tools in their place.
They're well worth the $20 for a really superior pair of scissors that have sharp points. They'd be great for disjointing chicken, or other uses in the kitchen as their intention, but they're also handy for a tool bench or as craft scissors.
They are comfortable to hold. They cut everything with such ease and smoothness. I have now purchased a shameless number of them so a pair is always close at hand no matter where I am in the house, and it has also become a go-to gift. Be careful. It's the scissor equivalent of "first fix is only 20 bucks".
First impression: The balance is REALLY off, at least for me with small hands. (It's difficult to explain what I mean by balance here. The closest I can come is that with small hands, I can't open the handle part far enough to open the blade part more than an inch wide or so.)
They have been used for cutting up a few chickens, etc. and general kitchen tasks for the past two years. Always hand washed, never put in dishwasher. Yet now they are not even sharp enough to cut through a thin plastic or paper food package, so I'm back here shopping for kitchen scissors again.
