2 cups unsweetened almond milk
2 scoops ON chocolate casein protein
2 tsp xanthan gum
Mix everything together using an electric mixer and then put it in a bowl in the freezer for ~10 min. This will make a huge batch of it so you can cut it down proportionally if you don't want as much. The xanthan gum is what gives it the fluffy texture/thickness.This stuff works great
It wasn't until after I got this however, that I discovered what a great thickening agent it is. I used to be strictly a flour and cornstarch cook, but have switched over to arrowroot and now have xanthan gum as an alternative. While it does an amazing job in thickening things like gravies, it's not a perfect replacement for flour there either. But it's a different product so I don't expect it to be exactly the same either and it makes it no more deficient than stevia is deficient compared to sugar. It's just different and has some amazing properties of its own.
UPDATE: Just a note, hopefully the manufacturer will see this, the bag this is in isn't very good. I've taken one star off because of this (the Xanthum gum itself is still 5 stars). I was looking at the bag and noticed some pinholes in it. In the end, I discovered dozens of pinholes in the bag. I think anywhere the bag gets folded or crinkled, it gets a tiny hole. The sides and bottom especially.
