The first recipe I tried was the Mom's Shortcut Meatloaf, it involves using 1lb. of ground beef, lipton onion soup mix and ketchup. Now that is simple, perhaps too much so because I like to stretch my meatloaf with the addition of crackers, bread crumbs, and I use an egg with a little milk, but nevertheless her recipe delivers on what it says, that's a simple everyday recipe for your family. Her suggested sides are tomatoes w/creamed spinach and arizona potatoes and dessert is a frozen banana split pie. Her suggestion is to make a second meatloaf to freeze. Awesome because it is just as easy to make one meatloaf as it is to make two. I followed her direction and I did just that last weekend. We ate one and there's a second in the freezer.
I like Ms. Byrd's recipes because most can be frozen mid-stream and then cooked later, you can spend a Sunday afternoon getting all your meals prepared for the week and then have very little actual hands on time on weekdays.
I made the grilled onions with balsamic glaze. Her recipe calls for red onions but I used valdalia and it was just as good. The glaze was delicious as a topper to grilled hamburgers.
I think all of Ms. Byrd's cookbooks make great wedding presents. This cookbook has pages that will wipe clean, pictures are well done, and you can visit her website for updates and new serving suggestions.
