The 250 grit coarse side is used to quickly refurbish a really dull or badly nicked tool. The medium 1000 grit side will remove coarse scratches and prepare the tool for final polishing and honing. I give it a 20 minute soak in room-temp water and continue to wet by squeezing a rag every half-dozen passes. It seems to work best with a bit of standing water allowing it to generate a slurry that is most effective. The honing guide allows me to put solid pressure which works effectively. I'm not overly concerned with sheen or presentation, so the 250/1000 combo fits my needs great to sharpen back to perfect functionality. It's easy to bring them back sharper than they are new.
One other thing I'll note: I found this to be incredibly relaxing. Turned on some music and tuned up 4 or 5 chisels in an hour. A bit of a meditative experience that I really enjoyed, of course that's why I hang out in my tiny basement shop anyway. King products are great and I would purchase again and likely will buy other varieties! (And eventually one of those re-grading blocks to re-flatten the stones themselves).
This stone is not for finishing. The 250 grit is pretty course and I tend to use it for reshaping jacked knives into a convex edge. I then follow it up with the 1000 and then polish with a 6000.
I used this stone for my 8" Victorinox that had been dull and useless for a very long time. My electric diamond wheel sharpener was no good for the Victorinox. 20 minutes with this stone got that knife nearly factory sharp (I used it alongside a brand new Victorinox to compare). Thin slicing tomatoes and very fine dicing onions effortlessly.
I was shocked and delighted at the results. I look forward to getting better with practice, and likely getting some even higher grit King stones (though there may not be any need).
I had some knives that were so dull they wouldn't even slice bread. I spent about ten minutes sharpening two knives, starting with the 250 side, then polishing with the 1000 side. They are now so sharp my wife is now afraid to go near them.
