Udon Stir-Fry Noodles
Udon Noodles are thick, white Japanese noodles. They can be eaten cold or hot. Udon Noodles are often served in a mild fish broth, flavored with soy sauce and mirin (sweetened sake) and topped with thinly sliced scallions.
Fish Sauce
Fish Sauce is an indispensable seasoning utilized in kitchens throughout Southeast Asia. It is used much in the same way soy sauce would be used in China or Japan.
Wide Lo Mein Noodles

Cooking directions:2 minutes.Wok/skillet: KA-ME noodles are quick and easy to prepare. Heat 1 tbsp of sesame oil on high. Add your favorite sauce and KA-ME stir-fry noodles. Cook for 2 minutes, stirring constantly.90 seconds.Microwave: remove outer bag. Pierce inner pouch several times. Cook on high for 90 seconds. Serve plain or with sliced meat, poultry, vegetables and sauce.

I like that they are so easy to work with and do a great job of picking up and taking on flavor of sauces and seasonings. While I can find this brand in a grocery store, I still live bit of a drive away to get to it. I am much more likely to have it quicker ordering it here than making a special trip to buy it. This multi pack is a reasonable price. Some sellers gougem which makes me just take the trip to the store instead. There may be better options out there, but I haven't found any to try. It has to be thick soft noodles. That is what I am craving when I think of these Udon noodles. Not the same with dry, flat uncooked noodles.
Each package is a set of two, and there are 6 packages (of 2) in this "pack of 6". Any time I have purchased from the store, I pick up 2 packages (which is 4 small packs) as I have a huge appetite, and when I have Udon noodles, the focus in on consuming the noodles and not so much as the add ins. There are left overs, of course. And that is the best part- eating these the next day after the flavors have melded together. MMMM. When I made a dish for my husband and I recently, I again used 2 full packages and added in beef strips, snap peas, hoison sause and a couple other goodies. We each had a good sized serving, he went for seconds, and I packed up the rest for him to take as a work lunch. Sad for me as I didn't get to have a second round.
Preparing is easy. I dump them into a colander, rinse them with warm water, add them to a pan with sauce and let them pick up the flavoring. Some of the noodles stick together at first and may break- or if you let them warm up in the sauce they will un stick.
My 1st meal with these was a soup containing shitake mushrooms and red bell peppers. After sautéing the veg, I added one jar TJoe’s Green Curry Simmer Sauce and one can of coconut cream. After mixing, I thinned with Miso and Ginger Broth.
Since there is enough soup for several servings, I put the Udon noodles in bowls (torn into smaller pieces-sorry!) and added 2 big ladles of soup to bowls. Since I wanted to be sure noodles were hot, I heated in microwave an extra 30-45 seconds. Next time I’ll probably add chopped tofu.
This was mildly spicy. If you like things hotter, add desired amount of hot chili when cooking shitake and red bell peppers. Grated fresh ginger would be good, too.
Since the box has several servings, I might use some to make quick vegetable noodle soup! Since they are already cooked, these Udon noodles will be easy and tasty in a stir fry!!
Yep. AMAZON! :) Like many of you, I was thrilled beyond measure to find my FAVE noodles here.
(Ten bags later, I'm not QUITE as enthusiastic about noodles, or carbs in general, BUT once I'm back into that sort of dish, guess where I'm heading.)
Some of my most-preferred methods of preparation (you can cook for ninety seconds in microwave--pierce the bag, though!!--or dump it into almost-cooked sauce. There's also boil-in-bag, but that's too labour-intensive for my old bones):
Add 1-2 TBS of cream cheese to hot noodles, stirring a bit (not too much yet) and letting it melt. After a minute, a TSP of Manuka honey joins the other two, and there you are. (This is great for quelling GERD.)
Or you can leave out the honey and put some chives and a TINY amount of sea or kosher salt.
Or... put a dash of peanut sauce and 2-3 TBS of LIME Ponzu sauce (HAS to be lime) with 2-3 TBS of our beloved cream cheese and ALREADY-heated noodles (it's REALLY clumpy and hellish, otherwise. Phew.). Dress with FRESH lime juice (colder is better, too) and some TINY bits of garlic or garlic powder.
Or, if your wallet's feeling the burn, a packet of ANY fast-food condiment that's floating around the house (hah, that would be funny if it really DID float around, I'd probably drop the dish of noodles. Wait, no I wouldn't. Heh...). I once put one mustard and two ketchups and had a ball. (Well, broke and ravenous = grateful for anything, even spinach. Ekh, how does Popeye do it??!)
