Examining the jar, you can tell it's well made but I had a few questions so I had to contact the manufacturer who is located in England.
Firstly, there is a floating cup inside the airlock, which I was confused about. The rubber bung is the stopper, and the airlock is the tube section and within it is a thinner tube. You put on the wooden lid, and then push the bung and airlock which are one piece into the hole. The floating cup sits on top of the thinner tube inside the airlock. You fill the airlock 1/2 to 3/4 to the top of the floating cup with water and then put the lid back on. There are tiny holes in the airlock lid that releases the fermentation gases. That was not in the instructions, so I thought I'd mention that.
Also I didn't have enough produce to fill the jar so I placed a cabbage leaf on top of my jalapenos and then placed the stones on the cabbage leaf, because the jalapenos were floating up and around the stones. I am including a picture of that and the airlock.
I just started my ferment and it's supposed to take only 5 to 7 days so I will report back after that.
****By day 4 I felt they were sufficiently fermented and put them in the fridge, in a mason jar with just a lid, but kept the cabbage leaf which now can keep them submerged without the stones. They will continue to slowly ferment since it's cold and hopefully will last me a while.****

Adesso ha una gradevole acidità (che ricorda l'umeboshi), è croccante e tutti i pezzi sono completamente "permeati" di salamoia.
Pezzi tagliati un po' grossi, ci hanno sicuramente messo più tempo che se li avessi tagliati più sottili...
Nessun incidente (intestinale) dopo gli assaggi.
Raccomando, tantissimo.
