It does not taste like gluten free! I am a Canadian who makes pastry from the tenderflake lard recipe on their box. Since I was diagnosed, it has been pointless trying to make pastry. I tried this and I cannot believe this is gluten free. My mom who is a 95 year old baker, could not tell that this pastry was gluten free! Thank you, thank you!!

Everyone with celiac disease or gluten intolerance needs to keep this on hand. It's so handy to use in any recipe and I am very happy with my baked goods using this flour. I bake muffins, quick breads, cookies, and cakes regularly and I am happy with the results. I also use this to make pancakes on Saturday mornings. For pancakes, I do add some extra milk to get the right consistency for the battery, but fir everything else, I never use special recipes. I use the small recipes I used before being diagnosed with celiac. I haven't tried using it with yeast breads, but for other baking, it's a great product at a great price.

This one has worked with very little adaptation for every dish I have tried.
And my wife has not reacted to it yet.

I am a baker and have made all but one of my family's wedding cakes over the years, and when my nephew married his sweetheart last year, I decided to carry on the tradition by making their wedding cake. They both just happen to be on "vegan" diets. I'd never made any vegan cakes before and was really nervous about trying something so different. I looked up recipes online and found one that sounded good, so I went ahead and purchased a 3lb bag of King Arthur Gluten Free flour and began the process. The first batch didn't turn out the way I wanted, so I tweaked the recipe a little and tried a second batch---which turned out great. I've enclosed pictures to show the two batches, (the picture with the cupcakes is a comparison between the first and second batches; you'll notice the left cupcakes are sunken in a little---although they still tasted great!) The taste of the gluten free vegan cake was similar to a regular cake, with just a little grainier texture to it, which seems to be the case with the gluten free flours that I've tried in the past. I appreciate how the King Arthur brand mixes well and bakes to a light fluffiness. I recommend this brand to those who aren't supposed to have gluten in their diets; it's a great alternative and can be used, as far as I know, in any mix that calls for the use of regular flour.

I purchased this to fill a need at our family baking/dinner gatherings to for Gluten allergy guest(s) to feel included. It's claim as measure for measure substitute for regular flour is a bit misleading in my opinion after several fails. I have found the rate of substitution depends/varies. example: 3/4 cup reg flour now takes 1+ (King Arthur) cup The added adjustments I found are needed to get the desired batter consistency along with adding a few simple spices to the recipes. Oh, well Potato ...Potatoe...Just one persons opinion. Best of luck to you.
