This is awesome. It works in almost everything. It's the only brand of Multipurpose gluten-free flour that I keep in my house. I made gluten-free, lactose-free pumpkin pie for Thanksgiving with this, and it didn't come out beany or grainy.

Recipe:

16 oz pumpkin puree
1 can full-fat coconut milk (Use the fat, and drain off 1/3 of the liquid.)
3/4 cup sugar
1/4 cup King Arthur Multipurpose Gluten-Free flour
1/8 tsp ground nutmeg
1/4 tsp ground ginger
1/2 tsp ground cinnamon (Use McCormick. All of their single-ingredient spices are gluten-free)

Mix all of this up with a hand mixer, and bake at about 450 for ten minutes and 350 for an hour and fifteen minutes.

I have a sensitivity to gluten.
Most gluten-free baked goods taste so bad that I either do without, or eat and pay the price.
However, occasionally the urge to find a solution strikes me.
Tried almond flour (figured it must be good, it was so expensive). NOT!!!! If you buy the book and jump thru hoops, maybe it would work, but it is not a direct substitute for regular flour.
Bought this because of positive reviews. My husband made his wonderful 5 flavor pound cake today, using this flour as a direct substitute.
If I didn't know it was gluten free, I wouldn't think it was gluten free. Light, lovely texture, great flavor.
Highly recommend!!!! Can't wait to try in my Tollhouse chocolate chip cookies.

My sister in law has celiac disease. But, with this flour, I've made some pretty fantastic things that were enjoyed by all, not just those who had to. It's a good blend of rice flours with some starch thrown in.

I used it to make this gluten free pizza crust:

Followed the recipe, with some liberties (subbed the dry milk out, put potato starch in, only because of the gluten free guarantee on the starch and not on the milk), and added an egg. A lot of people don't realize that all you need to make really good gluten free things is a little more time, and a little more fat. The time helps the flour absorb the liquids, and the fat helps keep them moist.

I've bought this time and time again, and will continue to do so.

I have not tried this for baking, but for thickening sauces and for coating things like fish, veggies, chicken, etc. before frying or sauteing, this is wonderful! It does tend to have a mildly strong potato flavor, which isn't bad at all. I am going to TRY making dumplings. Good stuff.

I usually buy King Arthur all-purpose flour in my grocery store to make cookies and cakes. Unfortunately, my niece is gluten intolerant and asked me to make a gluten-free pound cake. I couldn't find any in my grocery stores (they had rice flour, but I don't think it would have worked with a cake). I searched Amazon.com and found this. The box looked too small to hold the 3 cups of flour I needed for the cake, but not to worry. I had enough for the recipe and to coat the bundt pan. I've made countless pound cakes. This one looked just like the others. It was a little lighter and for some reason took fewer minutes to bake than with regular unbleached all-purpose flour. I've been assured by my niece that the cake tasted great. The next time I'll have to order the 3-box flour set that Amazon offers.

This works brilliantly - no need to think it through - just buy this if you need to use gluten free flour that works like a charm in "normal" recipes. Not a huge box - so cost effectiveness is an issue. But if you are looking for a way to just do your ordinary baking - this is it. I'm not willing to mix my own just yet - mostly just avoid things where flour is going to be a major ingredient. However, sometimes you have to have it - and this works great.
