Definitely the best of the pancake mix out there. I had this mailed to my mother's house for Christmas so we didn't have to remember to pack it. We also brought it when we traveled and stayed with friends because they are fluffy and delicious, and even people who don't have to eat GF will love them (as long as they're fresh, they get hard when they refrigerate). We bought this on amazon when we weren't living near any good grocery stores, but now we moved to the city and have access to real grocery stores, so I don't pay amazon prices for pancake mix anymore. Hope you can get this stuff at the store for cheaper, but if not, don't bother with the other brands; pay more and get it here!

I ordered this pancake mix because I recently found out I am sensitive to gluten. I thought I'd have to go without, being a King Arthur flour devotee I had to give them a try and found them to be delicious. The first words out of my 11yo mouth was that they didnt taste like regular pancakes, which is true, much in the same way that a brownie is different than a chocolate cake, however, these pancakes are delicious and I will buy them again - so much better than going without.

Confirmed by the disinterested King Arthur receptionist, this product does in fact have white sugar. If you have Celiac and aren't just a foodie, your kidneys will think you're trying to kill yourself with white sugar. If you feel oddly bloated or have aches in your back after eating white sugar, stay away from such products. Evaporated cane juice in it's simplest state is widely available and not required in pancake mix at all. I also could not give this box away to anyone, including a chef, a cook, a dishwasher and several other people at my building.

I was spoiled using mix that one has to just add water to so it was hit and miss getting batter prepared as I had to add a lot of water so it was not like concrete. I wanted to try gluten-free since I have ulcerative colitis so am changing my diet gradually. I believe I will only get a couple of meals from this mix and pancakes are very heavy so I will return to just adding water mix.

We used King Arthur flours happily for many years before being diagnosed with Celiac; but we have to say that their gluten-free pancake mix - apart from being nice and fluffy - was disappointing, for the following reason: the presence of what can only be described as an artificial, chemical-tasting flavor. When we checked the list of ingredients, we found the dreaded "natural flavors" lurking there! We are disappointed that a company such as King Arthur, known for its authenticity, wouldn't go the extra mile and either a) leave out any unnatural ingredients; or b) use genuinely natural vanilla extract, or whatever. It's back to Bob's Red Mill for us!
