I added cocoa butter, about 5% by weight, and that made a huge difference in flavor. The cocoa butter also helped to keep the coating from seizing when I added gel food coloring, so if you don't have oil-based color, you don't need to go out and get some.
I added Silk heavy whipping cream to make a ganache just barely thin enough for a drip, but it doesn't set up the same way a chocolate with cocoa butter does. I think adding more cocoa butter may help it to set firmer, but I haven't tested it yet.
The strawberries and cake truffles I coated had a great snap, and it took no more than five minutes to set firm enough to touch. There's no residue left on your hands or melting while handling the coating.
I think it would only benefit from having cocoa butter added instead of some of the other oil they use for the above reasons, but for a vegan that can't find affordable white chocolate anywhere, this has been a great product to work with!
However, it is NOT white chocolate...it is hydrogenated palm oils.
While it claims 0 trans fats, the serving size is only 2 wafers. Note that the law allows them to say 0 grams of trans fats if there is less than 0.5 in a serving. The law also allows them to call it "hydrogenated" if it contains both fully and partially hydrogenated oils. The oils can also be intersected without printing that on the label. If you want to know more about fully and partially hydrogenated oils and their dangers, there is plenty of information available on the web.
The end result: this product might or might not contain trans fats. I can't say, and they don't have to.
I also stress again: this white chocolate contains no chocolate of any kind. It is a white chocolate substitute, not white chocolate.
I would not have purchased the product if I had realized all of the above before buying...I guess I should read the labels and not be so focused on ratings.
I've noticed that there are a lot of reasonably priced pure cocoa butters on Amazon. I've decided to not use this product (or at least not much of it) and to use actual cocoa butter to make my own white chocolate (there are plenty of recipes online).
Note that this product is about half the price of pure cocoa butter and is ready to use, so once again, if you don't mind using a white chocolate substitute, this still might be a good product for you.
I should have known to go with a kosher brand - they have a long experience with dairy-free! Just note - This is dairy-free white chocolate, so the ingredients are quite different from white chocolate itself, but the taste, texture and melting properties are very, very similar.
worth the price! I will buy it again.
