If you've never used one of these, it is best to lay your meat on a piece of Waxed Paper or Plastic Wrap and then lay another piece over top. That keeps the mallet from tearing the meat. Be careful when using the tenderizer side of the mallet. I used it once, when I first received it, on a chicken breast and it went through the tender tissue and basically massacred it.
The device is so user friendly and fits into the hand very comfortably!
It is well balanced and allows for the perfectly tenderized piece of meat prepared for cooking.
I'm not keen on tenderizers -- they tend to make meat mushy in my hands. But she must have a more delicate touch -- chicken, veal, flank or skirt steaks, some other meats come out very thin and not at all mushy.
We both use this tool -- it fits both of our hands very well and very comfortably -- for pounding things like nuts to make them more flavorful and digestible.
A very nice version of a kitchen essential tool in many kitchens, and a very welcome gift to my significant other -- her old aluminum one was pitted and black beyond redemption although I tried to clean it up.
