My wife and I grew up completely differently, but we both insist on having this in the pantry for different reasons.

I was raised traveling all over with a military family. I think every U.S. commissary has these familiar blue boxes on their shelves. Since my parents were always busy, it frequently fell on me to make dinner for my siblings and me. 2 boxes of this, a can of green beans and 2 cans of tuna wasn't at all uncommon. It's the wonder meal base. You barely need to know how to turn on the stove to make at least an edible meal with this and if you don't have butter or milk, it works just fine with water.

My wife grew up with a mother who cooked dinner every single night. For her, the blue box was a forbidden treat. She would go to her best friend's house for Kraft Macaroni and Cheese and Dinty Moore Beef Stew. He would go to her house for her mother's home cooking.

So it's there, on our shelves. For me, it's a last resort meal for when neither of us feel like cooking. Still as easy, as convenient and as cheesy. For her, it's still a guilty treat. Something she wants to eat when nobody is looking. She will also use the noodles out of a box for another recipe and put the cheese packet up for use on popcorn. That's not something I ever tried before meeting her.

That's the best way to eat it. The noodles in a homemade chicken soup. They cook to al dente in about 7 minutes, so add them at the end. The cheese packet, sprinkled over popcorn that's shared with the person you love while watching action films.

As I sit here, with a mouth full of this fine Kraft product, I can't help but remember that fateful December afternoon. The war had ended some time ago, yet you could still hear the resentment resonating through the townsfolk's gnashed teeth. Jake and I were at the bar, as usual, trying to drink away the sun. The barkeep, sliding a filthy rag across the counter, squinted as he tried to read our shirts. He let a grin escape and shook his head.

"You got a problem, old man?" Jake took off his glasses.

The barkeep ran his forearm across his wrinkled face. "Ain't no problem here. You boys have guts, is all, wearin' those Kraft logos around these parts. This is a Stouffer's county."

Jake stood up, sliding his stool back across the hardwood floor. "If I wanted to choke down frozen food, I'd move my ass to Alaska. I'll take The Cheesiest any day." We used to call him Jake the Patriot. Always looking for a fight. I grabbed his arm in a vain attempt to pacify him. Looking around the room, I saw we were vastly outnumbered.

"Choose your next words carefully, son. Don't look like you're makin' many friends here." The bar patrons began edging closer to us. There was a wild look in their eyes; the kind that only came from malnutrition. I felt a moment of pity for them. Who could deny the inherent benefits of Kraft Macaroni and Cheese?

Jake discreetly slipped brass knuckles on underneath the counter. "You heard me." He turned, addressing the whole room. "Stouffer's is garbage." The patrons exploded. Love this mac and cheese, as it brings back so many memories from my childhood! I will though, share a little secret, a recipe that will bring this from a box mac & cheese to something much higher end. If you follow this modification of the recipe it will be a 10 star dish! I have been doing this for years and it turns a normal box of Kraft Macaroni and Cheese into a very creamy dish!

1) First, combine the dry macaroni noodles and 2 cups of milk in a medium pot.

2) Place a lid on top to help hold in moisture and heat. Bring the pot up to a boil over medium/high heat, stirring every minute or so. Don't turn the heat all the way up because milk can be delicate and may scorch or boil over very fast.

3) As soon as the milk reaches just to a boil, reduce the heat and let it simmer until the noodles are soft and have absorbed most of the milk (about 6-8 minutes). It is VERY important to stir often and replace the lid as soon as possible after doing so.

4) Once your timer goes off, add half a stick of softened butter, mix until melted completely, then add the packet of powdered cheese and mix thoroughly. If you are feeling extra adventurous add a little bit of shredded cheddar!

5) SERVE!

This creates a dish that tastes nothing like a typical box of instant Kraft Mac and Cheese. If you'd like you can even add some seasoning, I typically just keep it plain. It also keeps you from having to strain the pasta so it saves a step!

If you're an American over the age of 8 (or a Canadian over the age of 5) and eating solid food then you probably know what this stuff tastes like. That said, if you're not an American (or a Canadian), and/or a recent immigrant (welcome) then let me start off by saying that this stuff is more or less a defining part of American cuisine... i'm actually surprised that it's not on the naturalization test... and when I say that, i don't mean macaroni and cheese in general, i mean "Kraft Macaroni and Cheese". This is like Marmite or Vegemite if you're from England (yuck), like Swedish meatballs or that weird fish stuff that comes in a tube, it's like french baguette or Japanese ramen. This stuff is a national treasure (though, for some reason, if you're Canadian you eat more of this stuff than even Americans)

So what does it taste like? Well, it's a little mis-leading... if you come from a culture that has cheese, then let me preface the rest of this paragraph by saying that you should not expect this stuff to taste like cheese, and when you empty that bag of neon orange powder out onto your noodles this will become clear, and you will be a little taken aback... but fear not! A wave of deliciousness is in bound. It's hard to describe exactly what it tastes like... I'd say; salty, milky, cornstarch with limp noodles (but that doesn't exactly market it well)

There's something comforting about it and you won't be able to put your finger on it (probably the high fat content, or the salt, or the carbs... or the fact that there's probable nothing in this that's any good for you). And what's more! Once you have consumed an entire box of this stuff on your own you will be a true American! (or a Canadian). And the fun doesn't stop there. You can add stuff to it! For beginners i suggest, ground beef or hot dogs...if you're feeling like going for the advanced levels try a can of tuna fish for that extra hit of sodium... and hot sauce... lots of hot sauce.
