There is a trick to make really crisp light waffles, however. Make up the mix according to directions but do it this way:
1. Substitute melted butter for some or all of the oil.
2. Separate the egg. Add the yolk as you mix the rest of the ingredients, then beat the egg white until stiff and fold it in as the last step (put the whipped egg white on top of the batter, turn it in with a spatula, cutting it in gently until it is just mixed and the egg white is not showing lumps of white.)
This trick will also work with any gluten free mix you may use (and those flours tend to be heavier than this mix.) I also add a pinch of ground cloves or cinnamon to add some flavor. Naturally, using a very good waffle maker, such as this one, will insure you get the lightest, fluffiest waffles you can make. There are many good ones on the market but I use a relatively simple one Presto Waffler. The key is to flip the waffle during cooking to make sure the center is evenly baked.
There are ways to top the waffles that may surprise you. My dad's favorite was cream cheese and apple butter. I had them with strawberries and huge mounds of whipped cream in Luxembourg, and the best way I ever had them was with cherries (rather like pie filling) and whipped cream in a little mountain village in Germany. Those were awesome. As I said, not diet food, though you can simply dust them with powdered sugar and they still are pretty darn tasty.
We found Krusteaz products purely by luck; one day we were short on time but had friends coming over, and we wanted to make a nice dessert item that would be good with after-dinner coffee and would make the house smell really nice for their arrival. and her husband. They put them in the oven for 10 min. and are just as fresh and the day I made them. They come over at least once a month for their waffle breakfast.
Mix well and let it sit for about 5 minutes to incorporate some air into it. Then scoop into the mix without disturbing it and pour on ready iron. If you have trouble with the mix pouring out the sides there isn't enough air in the mix meaning you either didn't wait long enough to let it rise or you're stirring or disturbing the mix too much when scooping out the batter.
If you don't have a timer on your iron, wait until steaming decreases to remove waffle.
If you really want a tasty waffle, don't even think about using oil. Melted butter tastes 100% better and releases much easier than oil.
Put them in a warm oven with the door cracked open to keep them crispy while continuing to cook them.
A 28 oz box makes 10 7" waffles according to the directions. I have the Waring pro double waffle iron and one box makes 12 waffles.
