This is an excellent mix for waffles. You can make them with or without the egg and oil, but they are better with those ingredients added. Waffles are not diet food.

There is a trick to make really crisp light waffles, however. Make up the mix according to directions but do it this way:

1. Substitute melted butter for some or all of the oil.
2. Separate the egg. Add the yolk as you mix the rest of the ingredients, then beat the egg white until stiff and fold it in as the last step (put the whipped egg white on top of the batter, turn it in with a spatula, cutting it in gently until it is just mixed and the egg white is not showing lumps of white.)

This trick will also work with any gluten free mix you may use (and those flours tend to be heavier than this mix.) I also add a pinch of ground cloves or cinnamon to add some flavor. Naturally, using a very good waffle maker, such as this one, will insure you get the lightest, fluffiest waffles you can make. There are many good ones on the market but I use a relatively simple one Presto Waffler. The key is to flip the waffle during cooking to make sure the center is evenly baked.

There are ways to top the waffles that may surprise you. My dad's favorite was cream cheese and apple butter. I had them with strawberries and huge mounds of whipped cream in Luxembourg, and the best way I ever had them was with cherries (rather like pie filling) and whipped cream in a little mountain village in Germany. Those were awesome. As I said, not diet food, though you can simply dust them with powdered sugar and they still are pretty darn tasty.

All of the Krusteaz products we have tried smell wonderful when baking, and their taste meets the expectation that the wonderful baking fragrance sets you up for. This Belgian waffle mix is no exception - the waffles have a fantastic taste and are very easy to make. We add a touch of vanilla to the mix, and substitute melted butter for the oil... and we played with the temperature of our waffle iron to get the perfect blend of crispy outside and hot, soft inside. The end results is an absolute treat to the tastebuds and we serve it with your choice of jams, maple syrup and local honey.

We found Krusteaz products purely by luck; one day we were short on time but had friends coming over, and we wanted to make a nice dessert item that would be good with after-dinner coffee and would make the house smell really nice for their arrival. That product was the Crumb Cake (Krusteaz Cinnamon Crumb Cake Mix, 21-Ounce Boxes (Pack of 4))... and we were hooked from that day forward!

Since finding Krusteaz, we've branched out a bit to their other products and have found these to really be wonderful too: Natural Honey Cornbread (Krusteaz Natural Honey Cornbread & Muffix Mix 4 Pack 60oz), Wild Blueberry Muffins (Krusteaz Wild Blueberry Muffin Mix 17.5oz 2-pack), and their Blueberry Pancakes (Krusteaz Blueberry Pancake Mix, 28-Ounce Boxes (Pack of 4)). Am sure that we will find more to our liking too...

We completely and absolutely recommend this waffle mix and other Krusteaz product, and know that you will enjoy them as much as we do.

My sister-in-law got me using this brand. I will not use any other for waffles or pancakes. My family loves them. I make a whole box and freeze them for my daughter
and her husband. They put them in the oven for 10 min. and are just as fresh and the day I made them. They come over at least once a month for their waffle breakfast.

You won't find a better mix! Use 1 1/2 C mix, 2/3 C water, 1 egg and 3T oil per 3 belgian waffles.

Hints-

Mix well and let it sit for about 5 minutes to incorporate some air into it. Then scoop into the mix without disturbing it and pour on ready iron. If you have trouble with the mix pouring out the sides there isn't enough air in the mix meaning you either didn't wait long enough to let it rise or you're stirring or disturbing the mix too much when scooping out the batter.

If you don't have a timer on your iron, wait until steaming decreases to remove waffle.

If you really want a tasty waffle, don't even think about using oil. Melted butter tastes 100% better and releases much easier than oil.

Put them in a warm oven with the door cracked open to keep them crispy while continuing to cook them.

A 28 oz box makes 10 7" waffles according to the directions. I have the Waring pro double waffle iron and one box makes 12 waffles.

This is my favorite waffle batter. Locally it's only available in one grocery store and they charge a premium for it, so getting it at Amazon is a much, much better deal. I always add a tick more water than the directions call for and I find it makes for a lighter, more tender waffle. I was concerned about ordering four boxes due to the expiration date, but my order had an expiration date that was about 18 months away, so there's no fear there. As Belgian waffle mixes go, this is the best I've tried and this is by far the best price for it. I highly recommend it.
