Want to see some good proofs with a good amount of pedagogical exposition? Pick up a copy of Kvant! Some of the topics do assume a certain level of "mathematical maturity", but this is common amongst any mathematical literature. Thankfully, if you are unsure about a certain argument, it is not too difficult to clear it up by working through it or by reading into the subject a little further (thankfully we have google to aid us with this!). But it is a very enjoyable presentation of an array of mathematical topics.
