Thickest setting is thinner than advertised

I mostly bought this because there were several comments that the blade was sharp enough for potatoes, as I wanted a mandoline for making Spanish Tortillas. The blade is indeed extremely sharp and easily went through a potato, but they claim 3mm on setting #4 and the thickest I got was some 2mm, which is too thin. I looked through the reviews before buying and only one person mentioned this, but he thought he had a bad product. I'll likely return it for this reason. Also - the thickness adjustment is clunky and perhaps likely to break easily.

I looked at the best-selling Mueller Austria, which has a lot of accessories I don't need, but what turned me off the most were several comments that potato slices got stuck and the blades dulled quickly. They are said to have excellent customer service, so lifted their C.S. email address from an offer to make things right and sent them a message asking if was worthwhile for me to buy theirs.

BTW - from reading reviews I am dubious of angled models (vs. 90 degree or V-shape), as they often tend to have comments that the cut is varied thickness from one side to the other, and one even included a photo.

I'm now looking at an infinitely variable thickness model (0.3-9 mm) from Benriner for a bunch more money. I might first try to see if I can find an appropriate fixed-width slicer, as I only really want it for one thing. I'll have to search for "potato slicer". This does have a slightly angled blade, but Japanese technology trumps that.

A few general comments on mandoline.

Reading reviews, it's clear that there are a whole lot of idiots out there buying these.
I don't just mean those cutting themselves the first time they use it by not paying attention to what they're doing, or even the ones who say it's TOO sharp !!! duh . . . , but all the really dumb reasons for not liking the one they bought - including the many who say the food pusher doesn't work - see below. I do have sympathy for those who bought the brand where the cheaply (if at all ?) engineered black plastic "grabbers" easily broke off and got sliced into the food.

It's also obvious that all of the "safety food holders" are junk. I think I tried it for my very first potato slice and then just used my hands. The second time, I put on the gloves I bought. A big part of the problem is the round bottoms - and tops) of many firm veggies, so if you have something that's large enough to warrant it I would suggest cutting it in half first, then slice flat side down, with or without the holder. Of course this means reaching the top more quickly, but read on friend. I think this would make the holders much more effective, but they're just too fiddly for me. They also add time and effort, especially toward the bottom. I strongly suspect that these were invented just as a CYA measure to protect manufacturers from law-suits. There's something like a nine to one ratio of people saying they're useless to those who actually like them - for whatever odd reason. I'm amazed at how many people seem to think it's just a problem with the one they got with their brand. Dolts.

As for the last half-inch or so - I'm good at judging where/when the last slice is that a little bit of potato is still above the slicer edge - please don't try this at home! Part of my thinking is that the last little bit of potato is so rounded, that it's unlikely to cook in a different time even if the tiny center is 1/16 (or less) thicker than the rest of it. I may also use a fork to help push it through. I well realize that I could just toss it, but I'm stubborn and my mother grew up during the Depression, so I try not to waste anything. I see people saying to hand slice the last bit, but I'm buying a mandoline precisely so I don't have to do that! Sort of like the meat lovers attitude toward vegetarianism ;-)

It's sharp and is super easy to clean, but the adjustable thickness setting is flimsy at best and the adjustable table tilts slightly yielding an uneven slice. I own an OXO V-Blade mandoline ($60), which slices much more precisely, but it is an absolute pain in the A$$ to clean and dry. I use the Kyrocera because it's faster and much easier to clean. IMO, a simple and easy to clean design like the Kyrocera, but of higher quality is the best option.

Wide enough for an onion, tomato, or bell pepper. The ceramic blade seriously feels like you are slicing air.
It has a four click bar on the back. Set to 4, the thickest, and you get super nice thin slices. Go to 1, and the food guide is actually above the blade. Nice storage mode. But Alton Brown said these had four easily adjustable thicknesses. Mine might just be mismanufactured. I do really like it though for super thin slices. Stunned by how sharp it is.

Previously had a mandolin 'system' but it was too cumbersome, this however easily fits stacked away. The blade is predictably sharp (thus an obligatory mention to mind your fingers, and better yet buy cut-resistant gloves.) The purchase was in part a curiosity thing, however I have no regrets and have easily incorporated it into my kitchen. For most things, as expected I use the chef knife, however the mandolin comes in handy for repetative slicing of veg (e.g. potatoes), fruit (especially for a G&T), and even chorizo.

The tool is lightweight, comes with a plastic cutting guard to hold the fruit or veg. I find that handy, but iinevitably you'll put it aside in favour of just using your hands for speed and dexterity...then you'll lose concentration and forget just how efficient the device is...that's where the cut-proof gloves come in handy.

There are 4 levels of cut thickness, in my experience the 3rd and 4th (largest) are the only real usable ones. However, there is probably some fruit or vegetable that the thinnest cuts were crafted for, with those in mind.

At around 20 quid, this is worth it. After a couple of get togethers where the G&T's are flowing, you'll believe that it paid for itself. However, you'll find it useful for so much more.

Some mixed reviews on this produce of which some are downright missleading. EG. Dangerous as it does not have a safe directional holder fot the last slices-YES IT DOES, the nylon holder provided has two ridges which slide beautifully along the body of the slicer.
I regularly use it when I am getting down to the last few slices on the sweet potatoe that I am slicing,and I regularly get down to the last slice with no prob. And I do a lot of sweet potatoes 8 at a time to make the nices chrisps you ever tasted and without any rubbish addatives, in my dehydrator.
Find a plastic box to place the slicer accross- the Morrisons klip and lock 1Ltr food storer is perfect, the slicer latches on to it and is very stable-Slice away!!!.
Yes and take the basic sensible precations when using it and dont use it as a cricket bat.

Excellent Slicer

This is by far the best Mandolins out there. It is handheld, super sharp and just superb. We even managed to break one already but were so impressed with it regardless that we went and got the OXO one but didn't like it as much so ended up getting another one of these Kyocera ones.

It is fast and very simple to use. I do find the hand protector thing a bit fiddly to use so don't use that bit so much...to the detriment of one of my fingers! But even with this as an issue, I still can't recommend it enough. In fact, going to be getting it for my Father in Law who has a wrist problem at the moment.

I have used this to chop stuff for salads, to blanch super thin onions, it is a wonder on fennel...it really makes you add more stuff to salads because it cuts the chopping times that it doesn't feel like such a chore to create lots of dishes. The adjustable width for chopping is fantastic too.

So all in all, an excellent buy.

I already own one which I bought a few years ago and you know what it still slices everything like it was bought just yesterday. I think this is the advantage of ceramic blades they are brittle but if you look after them and not drop them they will last really long time keeping original sharpness.
