Zirconia Z206 is Kyocera's proprietary advanced ceramic formula made exclusively in Japan. No one else can use or claim to use our material. The advanced ceramic material has very dense sub-micron particles, which leave minimal voids. The factory edge would rival a brand new razor blade. My big disappointment here though, is that I discovered, after carefully examination the edge, the fact that whoever, or whatever done the finish sharpening, didn't pay close attention to their work and left the otherwise awesome edge jagged and chipped at the butt end near the handle (see photo). This is inexcusable in a knife of this price made in Japan! Mine's going back. I'll try another one to see if this is just an isolated example.
My only other gripe is with the dinky little plastic sleeve supplied with the knife. At this price, Kyocera could have provided a more substantial protective sheath or cover to protect this fine blade, but I guess you save a penny where you can. Otherwise, an incredible knife!
P.S. I don't know what, or why, Amazon keeps deleting my attached photo here. I have had to re-post this review 3 times now because the attached image keeps "disappearing" for some reason. I'm sure it will disappear again soon after this re-post.
The knife is made in Japan, and the ceramics are high in quality. The ceramic knives you may find at the stores (in US) usually have white ceramic blades, if made by Kyocera or other companies. The LTD series are their higher end ceramics and are more durable than the white ones. I haven't been able to locate one of these in stores in the US, but glad I found them on Amazon.
I have been in need of a chef knife for a long while and was debating whether to get ceramic or steel blade. I went for these ceramic blade because:
1. Kyocera offer lifetime sharpening. You have to pay shipping, but if you have multiple Kyocera blades to sharpen, you can send it all at the same time in one shipment!
2. The Pakka wood handle is finely crafted and it's unique. I know it's just a knife, but I also like to have a unique style. It's also very light when held. Surface is smooth, but not slippery.
3. The blade is really sharper than any knives I've used.
Some word of caution about ceramic knives
- Always handwash only in warm water
- These are ceramics, and yes they can be chipped if you use it to chop very hard things.
- Don't use the pointed end during chopping as it can chip the knife.
Ceramic knives do require extra care, but they will last and will be sharper than any (in my experience) steel blades if used carefully.
Kyocera will sharpen them for life. Any chips or dulling will be ground away to create a new blade. Highly recommend.
