sharp- you can get a steal knife sharper, but I doubt you can find one that stays sharper. In my entire time owning this knife it never dulled despite almost daily use.
not dishwasher safe, according to the manufacturer. I put mine in the dishwasher and it discolored slightly, and ultimately chipped from banging against other utensils in there, but I now isolate my other kyocera knives when washing them and haven't had any more problems.
not the most durable, it won't dull, but it might chip. Don't get this near anything with a bone or a pit. I ended up first chipping my first one in the dishwasher and subsequently cutting through a piece of chicken that I thought I had deboned- I probably could have used it longer, but I worry about chips ending up in my food. If you're careful with it, I'm sure you'll get many years of use out of it, if you're like me, you probably won't. That being said, I'm fine with buying this knife every few years because it is simply the sharpest pairing knife that I've every used and I never have to worry about sharpening it (I know they sell sharpeners, but I've never felt the need)
Word of advice to all users: ceramic knives are sharp and hard. But they are also very brittle due to the nature of ceramic materials. Read the instructions carefully and do NOT deviate from recommended uses. They are perfect for SLICING. They are not really made for de-boning and heavy chopping because of the brittle nature of ceramic material. If you use the knife properly it should last for a very long time without cracking or chipping. I have my Kyocera 3.5" paring knife now for well over a year, and I use it daily to cut vegetables for salads. My wife uses her 5" Kyocera to cut thin slices off of a roast, and it works beautifully.
