The culmination of my inquiry led to the understanding that the price reflects an expensive heat treating process that results in more compact ceramic. A less porous material has more cutting surface, and the black ceramic is also less prone to wear, too. I decided this was worth the extra price and have not regretted it.
After using them for about a week I am impressed at how effortlessly I could guide the knife through a beet with a 3 inch diameter. It also easily cut through yams. I have not yet tried to cut hard winter squashes (ie butternut or kabocha) but based on how easily the white ceramic handled those vegetables I can guess these new ones will exceed the white ceramic performance as well. With softer foods, I was able to slice extremely thin because how little force these knives need to cut prevents the foods from being squished.
Please be careful when using these knives as they require less force to cut than you may be used to using with other knives.
I have found them to be the best quality, best warranty of any ceramic knife. I have owned several over the past 12 years. Anytime they failed to perform was because I used them incorrectly.
