I had 20 pounds of meat. To grind that took 10 minutes, had no any problem. The whole procedure today (grind, mix with spices and stuffing) took 3 hours. Plus 30 minutes yesterday to cut the meat, and 30 minute today to clean up after all.
To grind it very easy with this grinder. Sausage stuffing needs a bit more expertise to figure out, but after stuffing 2 pounds, it went really great (I used natural hog casings, that is more delicate to handle than collage casings).
Making sausage, especially stuffing, needs 2 people, however I had no problem with this grinder to stuff sausage only myself.
This is a great tool for sausage making in small scale, I really recommend this product.
I do pre cut and chill/freeze the meat before I grind and can rip thru 10#s in less than a 1/2 hour. Also keep the shaft, blades and head in the freezer and start a session with a piece of bacon to grease the wheels. All the cold stuff cuts down on the graying of meat from the heat of the grinder.
In fairness though, it is pretty loud.
It's not like you can eat cheaper grinding your own burgers, but you can eat more confidently, knowing the meat you are grinding came from one animal at a time and has no stomach turning scrap/by-products, etc.
When I decided that we needed a grinder to make our own healthy pastured pork breakfast sausage without any nasties in it, and to slip grass fed liver into our ground meats (you do feed your family grass fed liver right?) I am digressing.
So what I did was go to hunter forums, and sausage enthusiast forums to see what they recommended. I figured that hunters need to process thinks like 800 lb Elk, and other big game. And sausage makers, well they might just be crazy enough to know whats up. Short story short, they all seemed to love the LEM brand. Time and again I saw this brand mentioned from this model all the way up to the $600+ models.
Ask me if I have $600 to spend on grinding meat?
This baby set me back $75 as an open box unit from Amazon's Warehouse Deals. Thats the cost of 2 cheap grinders that will fall apart anyway. Digressing again.
This grinder grinds faster that I can feed it. I used to have a kitchen aid that choked on the wimpiest meats. This Lem grinder chewed the fattiest, thickest most sinewy fat I could jam in there. I jammed in some fully frozen meat too, and it didn't even slow.
I dont cube the meat like other grinder require (that sucks, it takes forever) I pretty much cut strips that barely fit down its gullet, and it goes to town, with no slowing at all. I doubt ill ever need the reverse function.
So get one. Now. Or next week, but then you will have to eat crappy grocery store month old grinds until then. So get one now.
