One thing I did find out was that while the directions say the meat should be under 40 degrees when you grind it FROZEN meat also has a tendency to clog so they mean cold but NOT frozen!
Over all the grinder worked great, it ground up all of the meat and bones, you just have to get use to how the meat needs to be (temp, size) when you are grinding. It was super easy to fix any clogs and I really like that when the grinder gets clogged it kills the power to the motor. It is also very easy to clean up afterwards.
Update (12-19-12): used it for the second time last week did another 40lbs of chicken and some turkey necks. The turkey necks clogged the grinder every single time but all 40 lbs of chicken quarters (bone, skin and meat) went through without a single clog!! Very happy with this purchase
Update (3-24-13): still going strong, 5 months and almost 300 lbs of chicken and bone later. We have gotten much better at grinding up chicken quarters and chicken backs, no clogs at all the last time we used it. The key seems to be to make sure all the chicken is thawed, we do put frozen beef liver and chicken gizzards through the grinder with no issues.
Now about the actual grinder: The stainless steel blade had a fairly coarse edge ground on it, so I sharpened it up on a diamond stone, and also lapped the cutting plates to dead flat. I ground 60 lbs. of Boston butt that I had previously cut into 3/4" thick strips. It pulled the meat in as fast as I could feed it without even changing the tone on the motor. This will easily handle 1-1/2" strips. I made five different sausages, two of which I re-ground with the coarse plate and three with the fine plate. When re-grinding with the fine plate I could hear the motor pushing but it didn't slow down at all. If you are going to running batches this size often I would recommend you spend the money for the LEM #12 with the 3/4 horsepower motor, but I usually only make about 20 lbs. at a shot and I am quite happy with this. I think you get a lot of value for the money on this one.
