My brew is happily bubbling away now. This stuff is fast! I did follow the manufacturers instruction to re hydrate first which is a new step for me. I'll be doing that from now on. This fine yeast has gotten my concoction off to a great start. Now the rest of it will depend on my handling and conditions.
I started another two gallons and made one without re-hydrating the yeast first. The one that I did re-hydrate started reacting much faster. I won't be skipping that step again.
I haven't taken any hydrometer readings, as I have deviated far from standard recipes, so I'm a little unsure as to how long I should leave the batches alone. I'm aware that the EC1118 has a much longer settling period (for removing fusels), as it is not a beer yeast, so I plan on leaving the mead alone for at least six months to a year.
I agree with the other reviewers and would definitely recommend this yeast as a catalyst for stuck fermentations. However, as the yeast is considered a champagne strand and not beer, if you are stuck in a beer fermentation, or you are simply intending this yeast as a primary yeast for beer, you may want to look elsewhere.

I followed the directions on the packet and re-hydrated them at 100f but next time I will just pitch it in, from what I've read that approach works fine.
I like getting them in packets of 10 because (a) more bang for your buck and (b) if you goof up you will have fresh yeast available. They come in a package that fits inside a standard mailbox. I keep the pack in the fridge. With my first purchase they arrived very quickly after ordering.
