Ingrid Hoffman has made a Latin cookbook with about 150 recipes that are light and healthy. Determined beginner cooks could do the recipes in these pages, the most difficult thing probably being - dealing with enchiladas and just the amount of prep (chopping and peeling) that are required. That also means that many of the dishes are using fresh food rather than just dumping things out of a can or a freezer bag. The ingredients are not all that exotic; they can probably be found at most ordinary grocery stores, including pumpkin seeds and plantains.

The book contains; a section on ingredients and healthy substitutes, breakfast dishes, appetizers, snacks and dips, soups, salads, chicken, turkey, meat, seafood, sides, drinks and desserts. Most recipes have large colour photos. The salads are especially delicious, refreshing and different.
We liked so many dishes in here and have made several each day. Examples of what we have enjoyed and that are in the book are: mango-tomatillo guacamole, classic Latin avocado and tomato salad, campfire salad, pipian chicken in acorn squash, sherry and parsley chicken, Mexican meatloaf with tequila ketchup, shrimp and scallop easy paella, rice cooked in beer, spinach and mushroom stuffed baked potatoes, blood orange beer cocktail.

The index for the recipes is done in very small print - as if they were trying to squeeze everything in on a page and a half. It also lists the recipes by name when it is much more helpful to list under categories of main ingredient. Page numbers are printed in a very light blue colour and are not always easy to see.
This is a very nice cookbook to add to your collection...for some delicious recipes, Latin recipes and some distinctive lighter healthy eating.

I've cooked a few recipes from this book and had stellar results - in fact, this book's version of Basque Chicken is better than many full-fat versions I've made. Since I have cooked an original version of many of these recipes I can see where the fat has been cut, but I also need to count carbs, and this is where the book loses a star - no nutritional info. I was surprised at how quickly many of the dishes came together - good even for weeknight cooking.

Latin D'lite is now one of my favorite cookbooks! As a food Blogger I always look for inspiration to create new recipes and stay healthy at the same time. Ingrid's recipes are easy to follow and full of flavor, she makes eating healthy taste great! Really beautiful photos and lots of fun tips that keep you turning the page. Enjoy the occasional indulgence and get introduced to new ingredients and spices;and dive into real Latin cuisine. Absolutely love it, to sum it up in one word: INSPIRATIONAL !

I use this book very often to make meals, i find it very helpful and have enjoyed everything that i have made so far. Even if you aren't a very good cook like me, the recipes are very practical and easy to make. This book has truly helped me be more creative in the kitchen. I consider this book indispensable for anyone who wants to make fast but healthy meals.

Staying in shape while eating all the great Latin dishes I grew up with is not easy.... but the recipes in this book pack all the delicious flavours without the whopping calory counts. I bought the Spanish version of the book and loved it so much that I now bought a stack of the English version to give as hostess & birthday gifts this year, a fabulous gift as the book is beautiful - the colours and the photos are great. Also, the recipes are very easy to follow, even for people who have not cooked Latin dishes before. My favourite recipes are the sweet potato and chicken soup, which reminds me of the traditional Ajiaco Bogotano, and the chipotle-rum-orange pork chops are to die for!!!

This is not a true "light cooking" cookbook. There are too many recipes that include fried food, heavy cream, white rice, sugar, ice cream and so many other things you would think a book like this would avoid. One shake recipe in the book calls for a milk chocolate bar, regular vanilla ice cream and M&M's. Really? There's also a recipe for white rice cooked in beer, among many other questionable "light" recipes. This was a TOTAL Waste of money.
