Let's Do. Organic Coconut Flour is made from certified organic fresh coconuts. After separating the rich, white coconut meat from its shell, we use pressurized steam to remove most of its fat. We thoroughly dry the defatted coconut before milling it to a fine cream colored flour. Although its texture is very similar to wheat flour, Let's Do. Organic Coconut Flour is completely gluten free, high in fiber and more than 20% protein. Organic Coconut Flour is wonderful in baked goods, and delicious in your favorite smoothies (with the benefit of adding healthful protein and fiber). Let's Do. Organic Coconut Flour may replace wheat flour completely in many recipes with great results (see our Brownies recipe below for a perfect example). In other recipes you may only want to replace up to 25% percent of the wheat or other grain flour with coconut flour. When you replace other flour in recipes, be sure to increase your liquid by the same measure. For example: if your recipe calls for 2 cups of flour and 1 cup of water, you could use ½ cup coconut flour plus 1½ cups any other flour, and then you must add an additional ½ cup water to total 1½ cups liquid. When I first started using this product yes, the grain was coarser but around 6 months ago, they improved that. The price initially enticed me to this product (currently about 80 cents cheaper/lb. than BRM) , but the *no sulfites* keep me coming back. Two major factors that attracted me to coconut flour were high fiber and low oxalate. I believe it's also lower in sugar on the GI/GL tables. It's also nice that there are 6 bags per carton - don't have to order it that often (vs. 4 bag cartons).

There was a learning curve when I first switched (hint: bump your leavening up) in spite of buying Fife's coconut cookbook; don't waste your money unless you have no concerns over cholesterol and eating exorbitant amounts of eggs. I substitute flax "goop" from ground flax seed (and water) and knock the egg requirements down by at least 1/2 or 2/3! Initially, I used only coconut flour for all my baking and pancakes; I even put a Tlb. in my rice farina. Recently though, I have branched out to adding rice and/or tapioca flours to make my own gluten-free flour blend. Tip: Go to an Asian supermarket for the rice flour (non-glutenous type has less starch) and tapioca flour if you're on a budget. Also, sift your flours 3x before using/baking.

Yes, it's more work and more money than wheat flour, but my quality of life has improved drastically and that's worth it!!!

Based on the reviews, I bought both Bob's and Let's Do... I made pancakes with both and we like Let's Do... better. I found the pancakes to be less grainy with Let's Do... and they simply had a better taste. The pancakes from both kinds of coconut flour were fluffy and tasty. The bottom line is you might have to try both to get the one you need.

Yes, this flour is not as fine, however it is absolutely the best for my favorite banana muffins. The muffins come out angle-soft inside, have nice texture, and a good-looking golden crust. I use

2 eggs
1 cup of buttermilk
2 ripe mashed bananas
1/4 cup of oil
2/3 cup packed light brown sugar
1 cup of organic coconut flour
3/4 cup all-purpose flour
1 1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
1 teaspoon vanilla extract

bake about 20 min

I've used it for brownies (recipe on back) and it's wonderful. Plus it makes a great coating for grilling seafood. I also add it to cereal to slow the carbs down and used it in meatloaf instead of grains. You'll want to get the cookbook. Very pleased.

I had been using Bob's Red Mill coconut flour for all my gluten-free baking but decided to try this brand because it was cheaper. And, let's just say you get what you pay for!! This coconut "flour" isn't flour at all... it's coconut meal. It's much more course than Bob's Red Mill and leaves all my baked goods with a undesirable grainy texture. I would absolutely not recommend this brand, however, I do recommend coconut flour in general. It's an absolutely wonderful substitute for grain flours.

This is super great for pie crusts and hearty breads. Well, basically anything but it is not as finely ground as some others - so for those special pastries, you may want to use Bob's. But for everyday family treats this is a great organic flour. I use it everywhere that calls for flour of any kind. It adds a subtle sweet taste of coconut, so it makes normal recipes feel a little exotic.

For my birthday I got a cook book (gee thanks) but now that I have to really watch what I am eating, I am starting to learn to cook and bake. Before this gift, I didn't even know there was such a thing as coconut flour. So I saw the yummy cover on 47 Irresistible Baking Recipes with Coconut Flour! and I had to try that. It came out perfectly! Well, my rounds were more oval -but the taste was great ! Then I tried their chocolate chip cookie recipe - it was delish. I am not up to making some of the fancier things in this book - but everything I have tried so far is coming out great. I just didn't know how much better coconut flour was for my diet! Now all I have to do is make sure I don't eat too much.

I have really changed my diet over the last year, and I get almost everything organic ... this happens to give me my fiber as well as cutting down on carbs and wheat. I can tell how much better I feel, and I'll never buy that processed junk again.

I have tried several brands of coconut flour. This one is clearly the best in flavor, texture, and ease of use. I love the convenient one-pound packages(I usually buy in groups of six and refrigerate all of them). The packages are not so easy to access on a daily basis, so I open one and pour the entire bag into an airtight container which I store in the refrigerator. Works great!!

Purchased for a low carb lifestyle and type 2 diabetetes, this makes baking/cooking very tasty.

I have made cheese biscuits (twice) and as a "filler" for meat loaf. I use a combination of Dana Carpendar's recipes and the latest "Low Carb Among Friends" cookbook.

I don't find a pronounced coconut flavor, just adds a wonderful texture to low carb breads, cookies and cakes.

I was not disappointed and doubt you would be either, if you try it!
