Love the Pans, Even Though They Are NOT The Ones Recommended by Cook's Illustrated
Like so many purchasers of these pans, I too thought I was buying the pans recommended by Cook's Illustrated in their 2007 review of sheet/baking pans. BUT, that turned out to be just fine!If and when the pans I purchased warp or fail and I deem them a threat to my culinary efforts, I'll try the heavier, Sheet Pan Half Size - 12-7/8'' x 17-3/4'' Heavy Duty, 13 Gauge by Wear-ever (which are sold ON Amazon, but not BY Amazon-no Prime Shipping). Thank you so much "UpperDown" (the reviewer of the 13 gauge pans) for your excellent detective work and review of the other pans.Back to this sheet pan. My husband and I spent the summer tomato harvest season whipping up garden fresh, home-made pizza topping. Recipe: Gently combine slices of heirloom tomatoes, basil chiffonade, sliced garlic, capers (and a bit of caper brine for salt), a little white balsamic vinegar and a little sugar. Spread to single slice thickness on foil covered baking sheets and bake at 475 degrees until tomatoes start to caramelize (see customer photos of tomatoes, before and after roasting). The resulting, intense and heavenly tasting tomatoes were beyond superb with a bit of fresh goat cheese on a home-made pizza crust (recipe from Healthy Bread in Five Minutes a Day: 100 New Recipes Featuring Whole Grains, Fruits, Vegetables, and Gluten-Free Ingredients) or tossed with freshly cooked pasta. We froze quite a few quarts of oven roasted tomatoes that the family is enjoying to the fullest during these cold winter months!PROS: Despite the high temperatures, our pans did not warp. They clean up nicely and stack well. They've baked chicken, pork, cookies, tomatoes, oven roasted root vegetables, eggplants, peppers and more. The cooling racks, CIA Masters Collection Set of 2 12 x 17 Inch Cooling Racks fit perfectly in these baking sheets.CONS: NoneThey have become such popular pans in the kitchen AND around the house that I may have to buy a couple more for my husband to use for seedling pots in the spring. The alternative is to find my sheet pans missing one day and finding them under the seedlings as in past years. Those "borrowed" sheet pans rusted and necessitated the purchase of these great baking sheets. One more plus for these pans, they are clearly stamped "MADE IN USA"!

Below is the original review I posted. I considered removing it, but I want everyone to know what a "stand up" company Crosslitt Kitchens is and how impressive they are with customer service. Within 24 hours, I received an email from Crosslitt Kitchens explaining what must have happened with my pan. I received a personalized email, NOT a form letter, (as they referenced something I had written in my review ). Then they informed me that they were sending me a complimentary pan for the inconvenience. AND it arrived within 48 hrs. of the email. I LOVE it and I LOVE Crosslitt Kitchens. I not only received a brand new pan, but a personalized letter attached. If only all companies took customer service to this level. I had already ordered my replacement pan, so now I will have two. And I am thrilled because they are excellent pans. And I am happy to resoundly endorse this seller!!!!!!!!!!! (Also, they are repackaging the pans so the scratches should not occur anymore. My new pan was much more expertly packed! Thank you Crosslitt Kitchens!!!!)
Previous post: "I, too, ordered this pan based on the CI review. I was so excited to try this pan out, as I have been wanting one for over a year. Unfortunately, my pan also arrived with several deep scratches. How disappointing! I wonder if they are trying to pass out "seconds" or "slightly damaged" that can't be sold in a store? And, Amazon would not exchange it so it must be returned and repurchased, which is rather annoying, and time consuming. I will try to order this again, but I just thought others should be aware of this problem."
This is the sheet pan recommended and used by the reviewers of America's Test Kitchen. Who, by the way, are never wrong about anything. The pan is excellent for everything from baking cookies (on parchment paper) to cooking a meatloaf on tinfoil to baking meatballs on a cooling rack (sold separately and very handy). Because of the lip it can also be used under potential messes (ie lasagna) to save you the grief of oven spills. The heating is even and the pan doesn't warp at high heats. It cleans up well, but does not look as pretty after some use, oh well. It is a kitchen staple and well worth the price.
Ordered two Volrath 1/2 sheet rimmed baking sheets. They arrived very quickly, packed together in a box that had been cut down from a larger box. The box itself was undamaged and came through just fine. The baking sheets were nested inside one another. The top baking sheet was pristine, and, in fact works just fine. However, the bottom of the two looked like it had been dragged across the warehouse floor and is warped on both long edges, just where the bottom rolls up to the side, making it unusable for baking. Seems like quality checking was absent or insufficient because a cursory look would have spotted the defects. The outcome was disappointing.
It's a good sheet pan, doesn't buckle under heat, heavy construction, good size for baking. But...like many others have mentioned, it arrived in a condition that looked like it was picked up off the floor of a warehouse and put in a box. Dents and scuffs everywhere and I'm pretty sure I could make out boot prints. I cleaned it well and I usually use it with tin foil, so it doesn't really impact my ability to use the pan, but...what in the world are they doing with these pans that they arrive like this?
