- WHAT IS PORCELAIN ENAMEL ON CAST IRON? It is glass that becomes bonded to the cast iron at high temperatures. A particulate of glass, called frit, is applied to the cast iron vessel and then baked at temperatures between 1200 and 1400° F. The glass frit melts and fuses to the cast iron, forming a bond. Porcelain enamel on cast iron is heat tolerant and impervious to water and other consumables.
- EASY TO COOK AND CLEAN: The porcelain enameled interior has a smooth finish that minimizes sticking, promotes caramelization and resists staining. Although enameled cast iron is dishwasher safe, hand washing with warm soapy water and a nylon scrub brush is recommended to keep your Dutch Oven in tip top shape!

Cooking And Caring For Your Lodge Enameled Cast Iron
1. Allow cookware to cool.
2. Although dishwasher safe, hand washing with warm soapy water and a nylon Scrub Brush is recommended to preserve the cookware’s original appearance. Citrus juices and citrus-based cleaners (including some dishwasher detergents) should not be used, as they can dull the exterior gloss.
3. If necessary, use nylon pads or scrapers to remove food residue; metal pads or utensils will scratch or chip porcelain.
4. Slight stains can be removed by rubbing with dampened cloth and Lodge Enamel Cleaner or other ceramic cleaner according to directions on bottle.
5. Dry cookware thoroughly before storing. Do not stack cookware.

Typically, I dislike Lodge products but for this price I struck. Couldn’t be happier, this is a real workhorse, a true performer and robust. Looks to last at least 3-5 years and most likely beyond with decent care. We haven’t had to apply baking soda let alone soaps or ceramic cleaners to get the product squeaky clean, and there are no stains left behind nor is much effort at cleaning required.
Recently we’ve used Instant Pots, with which we are really happy except that the stainless interior pots never seem to clean well, there is always some mineral residue in a crease or crack no matter what.
So we’ve drifted to the Lodge 7.5 enameled for all-around cooking and I guess we’ll continue to use both traditional cookery and Instant Pots in combination to achieve really excellent results. At first we thought the 7.5 ridiculously too large in dimension but after keeping it a while we ain’t a goin’ to a give ‘er up. Performs how we want and is quality kitchen gear. Lodge hit a home run in the sweetspot this time. Thank you, Lodge.

I put aside the fact that they don’t actually make their enameled cast iron in Tennessee, but in China. They go to great lengths to explain how carefully they monitor the manufacturing process to make sure that it adheres to their standards.
When it arrived, I used my new dutch oven to braise some cabbage and sausages. It cooked well. It looked good. And it was really big so it could hold a lot.
But, by the time the food was cool enough to put the leftovers away, the inside rim of the lid had rusted. Never mind that it stained the enamel on the base. What kind of an oven rusts that quickly?
Their customer service person explained that I should have wiped the inside rims of the top and bottom with oil before cooking, but conceded that they give no instruction to do that with the packaging.
I’ve used other enameled cast iron — from cheap brands without a reputation — and they didn’t rust. Brands like Le Creuset and Staub use a clear, matte enamel on the edges to protect them from rust. And that may be what Lodge did for the edge of the bottom of the vessel, too, since it didn’t pick up the rust from the lid.
I asked if this were their intended design or a defect, but after that first reply, they stopped communicating.
So my recommendation is either to spring for a more expensive and more reliable product or buy something much cheaper with the expectation that it may give you this sort of trouble.
