Cooking And Caring For Your Lodge Seasoned Cast Iron
Caring for your cast iron doesn’t have to be complicated. Lodge cookware comes already seasoned and ready to use, so you can make your family's favorite recipes right away. You can use it on any heat source, from the stove top to the campfire (just not the microwave!). The more you use it, the better the seasoning will get.
- Wash cast iron by hand with mild soap or none at all.
- Dry promptly and thoroughly with a lint-free cloth or paper towel.
- Rub with a very light layer of vegetable oil, preferably while the cookware is still warm.
- Hang or store cookware in a dry place.

Now that that's out of the way, let me tell you that you can go ahead and ignore all the bad reviews about this skillet. These people clearly don't understand that if you leave cast iron wet, it will rust. That's what iron is supposed to do... If you wash it with water, dry IMMEDIATELY. Not 5 minutes after washing, IMMEDIATELY. Do that, and keep it seasoned, and it will not rust. Ever.
It's also a good idea to season the pan a couple times before you first use it for cooking. Yes, it comes totally pre-seasoned, but it never hurts to make sure the pan is 100% sealed with seasoning. (the best way to prevent rust, by the way...)
I love this skillet so much, I went ahead and bought the 11" square griddle from Lodge, and plan on getting the 10.25 and 8" skillet, as well. Then, all my cookware will be cast iron or stainless steel.
Love it.
But just not convenient to use in the kitchen cook top; too heavy to use on stove and wash in sink.

Joke aside, I love this pan. Cast iron is not a perfect heat conductor so it may take a while to get up to your desired cooking temperature but its heat inertia is massive once hot so throwing in chunky steaks won't drop the temperature much. Same for casseroles, omelettes or pizzas. Or cornbread. There are not all that many things this pan won't adeptly handle on the stovetop or inside the oven or maybe outside on you BBQ grill. And if you feel like carrying it with on camping trips, it's equally competent over campfires.
The pan was decent out of the box but I did more seasoning on my own before starting cooking in it. Some people would say it's just as good as a non stick pan. It's not. It may be close on some jobs but this is not the pan for delicate fish for instance, This matter aside I believe every household should have one of these pans. They are awesome.
Edit: Taking back one star for the somewhat fussy way one needs to clean/ maintain it to avoid to re-season it. All it took was a night in the kitchen sink with water on it. Yes, it’s a big no-no and no, I wasn’t the one who left it there. I cleaned the rust and re seasoned it but on the first supsequent cook the seasoning started flaking so I needed to start back from scratch. It is back up in use now making reliable fritattas, tarte tatins and so on, but I can’t help thinking that an enameled version of it would see more use around the kitchen and be easier to care for at the same time. I’m saving up for a Le Creuset.
Maintenance is not very hard if you make sure there is not water after washing.
Size is perfect if you want to make a little more quantity or stuffed indian curry.
I only wish it had a very slight dip towards the center. when you pore the oil it goes off to the sides. But i can live with this as all the other things are positive
