I bought this hoping it could be used in place of the more expensive Bronte pistachio paste in David Lebovitz's Pistachio Gelato recipe. Apparently pistachio paste is not as standardized as peanut butter. I used the same amount as was called for in the recipe, but it was far too strong and had an unpleasant aftertaste. I would never attempt to substitute this for Bronte paste, despite the higher price of the Bronte paste. I gave this 5 stars because it isn't a fair comparison. It smelled great when opened, and had I used it on bread or in another recipe, I'm sure it would have tasted wonderful. I had to give this review though to warn others who might want to save some money on their Pistachio Gelato.

I bought Love n Bake Pistachio Paste for the first time last year at truffle making time and was delighted with the flavor. I've been making home made chocolate truffles from scratch for over 20 years, normally (in recent years) using Love n Bake Praline (hazelnut) Paste and decided to try pistachio on a batch. It was/is delicious. Someone's review mentioned the oil on top when the can is first opened, but that's the nature of the product. Both praline and pistachio MUST be stirred which is no easy chore since both are so thick. Worth the effort, though...for the quality of the product and the great flavoring. Plus you get a little upper body workout to counter the calories of the goodies you're creating! ><>

If you want everything to taste like very strong almond, with a green color, then buy this. If you are looking for something that tastes like pistachio, keep looking. Since you can not return this, make sure that you really want almond flavor in a different nut base, otherwise you might be disappointed. Yes, it does have a puddle of oil on top, but that can easily be stirred in, like old fashioned peanut butter. The almond flavor is not something that you can do anything about.

Pistachio Nut Paste performed well for the two recipes recently prepared. The taste was as expected for a pistachio product - it tasted like ground up pistachios, but it did have slightly more of an earthy/nutty taste than what you get from munching on whole pistachios, and this may be because they are ground and canned. I measured out a little over 1 C of Pistachio paste - using dry measuring cups. This allowed me to make two recipes from one can of Pistachio Paste.

Some pictures are attached:
- Can just opened had oil on top, which is indicated on the label. This was similar to what you see on top of natural nut butters.
- A quick stir and the oil was worked back into the nut paste.
- Pistachio Paste as mixed with butter, sugar, flour - color is very light.
- Pistachio cookies piped onto cookie sheet (before baking) - these are the cookies pictured on the label of the can of pistachio paste. The color is pale green as I added 6 drops of "neon green" food color
- A Pistachio quick bread in the pan before baking. It also contains dried cherries. The color is very light - I did not add any food color to this.
- Baked and dipped cookies ( they look pretty similar to the image on the can!)
- Inside of the quick bread (with dried cherries added). Notice the color is not green, and the crumb is more dense as Nut pastes will add texture and moisture to the baked good.

The baked goods turned out nicely. The flavor is mild as pistachio flavor is mild, but also very natural tasting. I used only 1 can of Pistachio paste for both recipes, but I did halve the recipe for the cookies in order to have enough Pistachio paste for each recipe. Although I used regular flour, the paste would likely work well with alternate flours such as Gluten- Free. Am happy with the baked goods and decided to write a detailed review as this is quite an expensive ingredient to purchase.

I bought this to make pistachio-chocolate truffle ice cream and it was great! It adds a beautiful green color to your custard and also a slight almond-y flavor. It has a rather smooth texture and is slightly sweetened. It would be a great additive for sandwich cookie filling. Delectable!

This pistachio paste did the job and made good tasting gelato but was on the sweet side, very strong flavor. I'm going to try the more expensive "Bronte pistachio cream" to see if its any better. Bronte not available on Amazon

I needed pistachio paste to make the recipe for pistachio cake in the Momofuku milk cookbook. After perusing the various kinds available, I went with Love 'N Bake - they seemed to be fairly reasonably priced, though all are expensive. Not having tried other brands yet, i can't compare. But this paste was quite yummy right out of the can (bordering on addictive), and stood up well in the recipe. I will buy it again.
