So Much Sugar!

I’m a caramel lover. I bought this book not knowing if it contained caramel recipes from other cultures. It didn’t as far as I could tell; some recipes may have a foreign flavor. These recipes are all presented for the sugar-loving American palette.

The recipes are thorough as to ingredients and mixing. However, I may or may not use these recipes unless with some experimentation. I would have liked to see a few creations using a natural sugar substitute like Stevia or some such. One cannot simply replace the sugar with an equal amount of a substitute because the proportion strengths would differ, not to mention the reactions of the other ingredients to the sugar substitute.

I would definitely buy another caramel book by this author if he produced one for the diet/health conscious among us. For this book, though, I give 5 Stars because the author did what he set out to do. The book is easy to read and understand. Caramel lovers should rejoice over this large accumulation of delights.
