  1. To the Instant Pot, add tortellini, broth, cream, garlic, and bacon. Do not stir.

In February 2020, Lisa was named Youtube's Creator on the Rise and she is now a full time Youtuber first. In 2021, she published her first officially licensed Instant Pot cookbook with Simon and Schuster. Lisa and her team of employees love to help their readers have confidence and joy in the kitchen.

I bought myself a 3.5 qt Instant Pot. I found this cookbook that said it was for 1 and was excited! I have tried a few recipes from the book and they all taste great and I see many more that I am looking forward to making. The book is well organized and it has some nice photography. Why a 4 and not a 5? Because although this is a cooking for 1 cookbook and every recipe says it serves 1, what I am finding is every recipe yields 2 or more servings. For my first dessert I tried the Dairy Free Coconut Rice pudding from p. 216 of the cookbook. It turned out great and is delicious however you can see from the picture that this recipe would serve 3-4 without issues. For this a reason I took off 1 star.

    I just got my first instapot. It's a 6qt duo crisp.

    So I'm going to start with the good about this book:
    The recipes are easy to follow and do not require a lot of exotic ingredients. I like that there is an assortment of different types of cuisine that tells me the author is a good ol American mom whose family loves a little bit from every country (she is actually I looked her up).
    I also like how you can easily change ingredients to suit your own tastes. Most of the recipes call for grocery basics like chicken, veggies, starches what have you. I love switching up my protein and using a plant based source, and the recipes are easy to adapt. I also like to switch up my potatoes and onions... Why not use a sweet potatoes to add a different nutrient group? Or instead of celery add some fennel for a new flavor? I like simple throw together things and honestly these are exactly that. Mix and match as you see fit.
    Finally, I love that all the recipes I've tried have been under $15 dollars... The least expensive was $5 dollars. I haven't tried everything, but pretty much all the recipes call for stuff we generally always have on hand. So far : Hardy beef stew, potatoes corn chowder, green beans and the spicy pineapple chicken are my top faves. No kidding, under 15 and I eat some of these for 3 days.

    Now my only real "complaint" and it's more personal than a problem:
    Many of the recipes call for use of other items: ramekin, steamer, cake pan... Now I just happened to put have a few of these with my instapot because it was recommended, but the add ons add a hundred bucks to your cost. I understand why the book included these add ons, but be aware that some recipes call for these and they are $20 to 30 bucks a pop.

    Overall, I really think this is a well constructed cookbook that helps you become familiar with your instapot. I will not say you are getting Gordon Ramsey quality meals, but they are good and healthy, easy and fun to make. Good job Author. I wanted to give this book 4 stars because I feel it should be included in your purchase but I decided 5 to be nice. This is a must for first-time buyers.

    As a live alone senior, this book has made my Instant Pot my favorite kitchen appliance! It allows me to try so many recipes I have avoided in the past due to not wanting so many leftovers or waste! Would highly recommend!

    This cookbook is a lifesaver for anyone cooking for one! The recipes are simple, easy to follow, and tailored for smaller portions, which prevents food waste. I tried the Chicken and Wild Rice Soup, and it was delicious! The Instant Pot makes everything so much quicker and tastier. If you're new to cooking for one or just looking for quick, satisfying meals, this book is perfect.

    First, THANK YOU to the Author and her team for producing this book. It’s the only resource I can find that shows how to make single-serving meals in a 6-qt cooker. This book showed me how it’s done. My treasured 6-qt PowerXL is used mostly for food preservation and occasional bulk meals. I dislike making and managing bulk meals, so I rarely make dinner with it.

    I purchased this book and easily found two dozen recipes to try. The ingredients were often in my pantry or freezer already. The meals were either good or really-really good. Based on the instructions, I was able to hack or tweak the PowerXL to perform like the Instant Pot, so I’m happy with the results. Hmm, maybe that Mini Instant Pot would be worth the space, and I wouldn’t have to hack and tweak…

    Having made about 35 recipes at least once, I can attest that a 6-qt multi cooker is absolutely worth using for small meals. I’d like to see more books of this kind.

    Here’s my Wish List for the next (please) volume:
    - An Index for ingredients. Meal planning is so much easier when all the recipes for andouille sausage or pineapple chunks are easily found.
    - Warnings for leftovers. I prefer cooking single-servings to reduce the annoyance of managing leftovers and the clutter of food containers. (That’s why I purchase Cooking-for-One books.) Some of the recipes in this book would easily serve two.
    - Tips on scaling family-size recipes downward and guidelines for minimum volumes that are required. Like, Is a two-ounce portion of pasta realistic?

    I’m very happy I found this book and look forward to trying 2-3 dozen more recipes.

    I have watched the authors, YouTube videos for a while and decided I would try her cookbook for the Insta pot. I have been very happy with the recipes and the detail of how to put these together into a wonderful meal. This cookbook is for one, but the portions are Probably appropriate for a couple. The directions are clear and concise and a good start to you creating good meals on your own with the Insta pot. I would recommend this for any newbie trying to get the Insta pot into their meal routine.

    I just got the book and was looking forward to finally able to use my insta pot. I cook for myself only so I figured this recipe book will be a worthy addition to my cookbooks but as I was going through the recipes and saw the nutritional information for each recipe, there's no way I would cook and eat 1,765 calories, 4,251 mg sodium PER SERVING of a pasta dish. If you like or don't mind eating a high calorie, high sodium dishes, this recipe book is for you. Instructions are very clear.

    Can’t wait to start trying these recipes - simple, quick and no fancy ingredients. Not marketed as a low sodium cookbook, nor are there overly salted recipes; personally I don’t think a pinch of salt hurts - just leave it out if you’re concerned! I really don’t understand the one star review, definitely nothing problematic in here.

    …for me, the trouble of cooking for one is the amount of work required for just the one meal…I prefer other books that are geared to “Cooking for Two” in the mini.

    As an aside, I am a long-time 6-qt user, but am finding the mini to be much more manageable and take much less counter space. Both have their places!

    Its is a good recipe book and I love her YouTube channel but I was left a bit disappointed 😞there wasn't more of everyday old granny foods. By old granny food I mean how to cook lamb joints, beef joints, all parts of chicken as well as whole, common everyday soups and meals, you know just plain easy to make food. Too many recipes on what I'd call fancy foods.
