That said, I would buy the book again in an instant for one gluten free recipe, the black soybean bread. This gem has become our main bread for sandwiches and burgers. I bought a muffin-top pan and use a half recipe to make 6 thin buns that are great for burgers. If I make a whole recipe, I put the rest in a 9"x9" pan, cut it into 4 pieces, and slice them in two to make 4 sandwiches. You can add spice toppings to taste. The bread has a unique and pleasing flavor that compliments most sandwich ingredients. I no longer follow the detailed instructions and just throw it all in a food processor, blend, and pour out, and it tastes just as good. I haven't found any comparable recipe on the internet, so they deserve a lot of praise for this winner. If you are both gluten free and low carb, it's worth the price of the book.
The downside is (you knew there was one!), you've gotta cook. Perhaps no noodles without work is a good thing; it certainly limits dumping a box in boiling water and pigging out. The good part of it -- you know what's in your food because YOU put it there.
Now along comes Drs. Eades and Ursula Solom with recipes that are exactly what they advertise: Comfort Foods. Tonight, we enjoyed delicious Chili Con Carne with Black Soy Beans and slices of Best Whole Wheat Bread and butter. All low-carb, satisfying and delicious. For breakfast, we added a slice of Super Banana Bread mini-loaf to our plate of ham and eggs. Hard to believe it was low-carb, it tasted (and rose) just like the real McCoy.
Most of the recipes freeze, so I can make a variety of baked goods on the weekend, freeze and have them handy for days to come.
I can hardly wait to try the Cinnamon Rolls, Chocolate Chip Cookies, Elegant Biscuits and so much more.
If you enjoy a low-carb lifestyle, this book belongs in your arsenal.
