I had this in Italy in form of a pie like thing. I bought it on the street in some small town. This was pretty much exactly the same. I made it per directions. It comes out like a strange pie, crusty on outside and creamy on inside. I put butter on it and eat it like that. Delicious and good for you. It really is just chick pea flour. It comes in Rosemary flavor which is what I had in Italy. You can pretty much add whatever spices you like but I just like it plain.

If you've never tried Socca/Farinata, a Mediterranean street food, buy some chickpea flour like this and whip some up - there's a recipe on the package. I made several different things with this product. I used recipes by NEW YORK TIMES food writer, Mark Bittman. You can find him online. Be sure to try his 'tortillita with shrimp' - amazingly wonderful! There are a host of other recipes for fritters, pancakes, etc. This is also avery healthy product - lots of fiber and no gluten.

I'm never quite sure I'm making this right. I've watched it being made on You Tube and it looks flaky but mine never turns out flaky, more like a quiche texture. There are some good recipes around for toppings and the like. Check out the Lucuni site. It's a great product if you have gluten free people in your family.

I was unsure about ordering this product because I didn't quite understand what it was. But, after a little nudging from a friend I bought it and I LOVED it. I personally use it as a pizza crust because it is much healthier than the ones you can buy at the store! But I also make it thicker and cube it up for a delicious protein in my salad. The Traditional is most versatile, but also be sure to try the Chili flavor if you like a little spice!
