Harvesting sea salt the traditional way
You could contend that Maldon Salt is really made by nature, with just a little helping hand from man to release it from the clutches of the environment. Certainly the ‘process’ is about as natural as these things can be. Seawater is filtered and boiled which, reassuringly, removes any impurities, and is then heated until the salt crystallizes into small, soft pyramids that melt in your mouth. If this sounds easy, there’s an art in temperature and timing and in particular, the traditional ‘drawing’ of the salt by hand from the pans,that confounds anyone without a saltmaker’s skills.

If you simply use pre-ground pepper, then you probably use Morton's table salt for the table and ketchup on your steaks. (I only use Morton's for cooking/baking)
But, if you bother with grinding your pepper fresh at the table, then you probably also grind your salt (e.g. Himalayan Pink Salt, etc.). Ground salts are good, but the salts that are flakey and can be "pinch ground" by your fingers are the best, I find. They have more character and punch, then pre-ground or grind-able salts. You will find some big flakes, medium and small fine dust all mixed in on your food. So, you get a lot more variation with each mouthful, that is subtle but noticeable. Your brain/taste buds eventually tire of repeated similar stimulations of the same type (the first bites is always better than the last). I am sure you noticed this. But, sometimes, you get that "good to the last bite" meal. It's due to some variability in the dish. Keeps your buds guessing and stimulated. Flakey salt does this, as far as the salty side of flavor goes, IMHO.

Has Lasted 13.5 months, we've given 2 or 3 friends "samples" of about a cup each ... we were excited, don't make the same mistake. Just kidding, sharing is caring. We're getting low ..but would probably still last another month or more.
Good, clean, crispy. Fun to crunch and salt bae sprinkle onto anything.
if you haven't used them, you should give it a try (they have small packs for like $6 but the tub is much better deal)!
This was the only Christmas gift I got my husband last year, he's very hard to buy for but this was a hit.
It has been thoroughly enjoyed by both of us (and our foodie friends when they come over to cook).
So last month I happened across Maldon salt in the original box package. I instantly fell in love. I was very surprised that it did not taste too salty. It almost had this airy texture and no bitter aftertaste. I’ve decided to order a bucket this time cause I went through that box in 2 weeks. The bucket arrived today and to my disappointment, this salt tastes nothing like the one I tasted before. It seemed to have more moisture this time and it was noticeably saltier than the one before. Unfortunately I don’t have any salt left from the package last time to compare it side by side.
I won’t be ordering the bucket again and will go back to subscribing to the boxes.

One major thing you should know is you cannot use this salt in a grinder. If you try to grind it doesn't grind and you simply end up with a blocked grinder. The crystals are thin and mostly flat, which is why they won't grind. See my photo below to see exactly what the grains are like. They range in sizes from very small to whole crystals. You won't need a grinder anyway as they easily crumble in your fingers. Actually the shape of them makes them good for salt blends, for example with powdered seaweed or black pepper, and you can add them to breadcrumbs as the salt grains mix well without becoming the overall flavour.
A bit expensive but a very high quality salt and the useful container is a bonus as it keeps the salt fresh and dry.

The one minor negative I’ve found is that some of the salt flakes are large, almost thumbnail size pieces and can be rock hard too, which is fine if it’s soups and stews etc you’re adding it to as they’ll soon dissolve in the hot liquid, otherwise I recommend crushing these larger crystals down a tiny bit before use (easily done with the back of a spoon or a pestle & mortar) as they tend not to fully melt on something like roast potatoes/veggies etc (and that’s even at high temps for 30 minutes) and you’re left with salt flakes on your food, which is not a pleasant experience. This aside, it’s still the best brand for salt as far as I’m concerned.
