The plot for the main story essentially the same throughout (minus the Minon's Quest). Core controls are the same having each Mario brother being controlled by a single button (Mario A button and Luigi B) in the over-world map and during battles. During battles exact timed button presses is required to do massive damage, dodge or block an enemy attack. Graphics have changed as it's no longer sprites, and now 2D/3D models
Minon's Quest is basically a behind-the-scenes story on how Captain Goomba, Shy Guy or Koppa and their crew rescue Bowser after Bowser is knocked out from the Beanbean Border. You can experience this side story by going back and forth between the main story with Mario and Luigi or Captain Goomba and crew at anytime once the mode is unlocked.
The gameplay for Minions Quest has different gameplay from the main story. It's basically a rock-paper-scissors (melee, range, flying) battle against two armies who auto fight each other. You do have some control during these auto battles as pressing a button at the right time does more damage. Also there are captain commands which cost CP. At the end of a battle, if any of the opponent's allies had survived, they will join the player's team.
Now that we got the major changes out of the way, let's go through other quality of life changes in the game (most of which are enhanced by the 2nd screen):
-The level of an enemy is now displayed next to their name when targeting them.
-Mario & Luigi's passports show their level and stats are displayed in battle on the bottom screen
-You can do tutorial/practice special moves similar to Mario & Luigi: Paper Jam.
-You can save at anytime in the overworld map
- Cutscenes can be sped up with R Button, or possibly with the icon on the touch screen.
-You can press a button on the touchscreen to display a map and put markers like in Zelda BOW.
-In the overworld, the bottom touch screen can be used to switch between moves like the High Jump or the Spin Jump. Mario & Luigi's positions can no longer be switched manually. Instead, they will switch automatically when selecting a move.
-Main menu has a guide button for to re-learn how moves work. Great for those who take break from the game a long time
-"Toadtown Square" is now re-named "Peach's Castle".
- Accessories can now be obtained throughout the entire game and not just from Professor E. Gadd.
-Mario & Luigi now make sounds when attacked or being attacked
- Mushrooms now heal 30 HP instead of 25. Syrups heal 15 BP instead of 20.
-Advanced Bros. Attacks are now separately selected and cost more Bros. Points to use
-Mario and Luigi will now jump twice on an enemy if a solo jump's action command is entered correctly. Before you only able to jump on an enemy once
-Some bosses now drop new gear
-Bosses now turn red (or different colors) when low on health, and have different attack patterns
-More cameos items form other Mario Games have been added to the Mario Bros.' House
-The Mario Bros. game is no longer included
-There are now heart blocks you can jump under to recover health
-Pressing the X-Button in the overworld will make both Bros. jump simultaneously, so you no longer have to press A and B the same time
-Able to track progress and collectables at a glance: The percentage of beans and ?-Blocks colleced can menu screen along with a summary of the current story
-There are now only 2 save files instead of 3
-You can continue the game after beating the final boss/credits

Overall, if you played the original there's not much to go back to except the Bowser Minion side story which is not that epic in terms of plot (has fun/funny dialogue though). If you want to re-live the story or are new to playing Superstar Saga there are some quality of life changes that makes the game more fun/accessable to playthrough especially if you played other Mario RPGs after the Gameboy Advance release.
I was really surprised that I like the graphics update as much as I do. I was afraid it might come off looking cheap and less alive, but they really did a great job. It feels even more like you're playing a Mario cartoon. The story is still one of the best Mario RPG stories and my kids find it as funny as I did when I first played it. It really has the best writing of the portable Mario RPGs.
It's been a long time since I played the original, but it doesn't feel like they watered down the gameplay at all. It's just as fun and challenging as it was back then. I really like a game that I can practice and get better and see results. You can certainly play without perfect timing, but you are rewarded for your effort.
Yeah, it's a little more grindy than new ones. It's possible to forget what to do next and have to wander around to find the next step. But the gameplay is superb, the story is perfect, and the world is complete. It's funny and charming and it makes me wish the newer games had heart and soul like this one does!!
Amazon also did a lovely job getting it to me on release day, kudos to them as well.
