Even though we didn’t know each other at the time, we each made the decision to reexamine the nutritional advice given to us by the conventional medical system. We started by looking to “alternative” diet philosophies for guidance, including vegetarian, vegan, raw vegan, and the Weston A. Price Foundation diet. Amazingly, our two different tracks led us to the same conclusion:
A low-fat plant-based whole-food lifestyle is the most effective way to gain insulin sensitivity using your food as medicine.
Even though this may seem counterintuitive at first, this form of nutrition is extremely powerful at reversing insulin resistance because carbohydrate-rich whole foods require large amounts of insulin if and only if the total amount of fat in your diet is also high, as you will learn about in detail in chapter 3. But when you eat a low-fat plant-based whole-food diet and reduce your intake of fat- and protein-rich foods, you gain insulin sensitivity very quickly, which in turn drops your need for oral medications and insulin in the short and long term.
Within days of changing our diets, we both observed that our insulin sensitivity increased dramatically. In addition, our energy levels increased, and our blood glucose became much easier to control. After only a few months of eating this way, Cyrus saw his total insulin use drop by 40 percent and Robby saw his insulin sensitivity improve by 600 percent. To put it in perspective: The average adult with type 1 diabetes injects approximately 0.5 to 1.0 units of insulin per kilogram of body weight per day. Following the Mastering Diabetes Method, those living with type 1 diabetes inject as little as 0.35 units of insulin per kilogram body weight per day, and experience dramatically improved blood glucose values, while increasing carbohy- drate intake as much as twenty-fold. When we transitioned to eating more plants, we began eating more fruits and vegetables than ever before—including many foods that previously had been forbidden on a low- carbohydrate diet. And despite this counterintuitive approach, we both felt better than ever—even better than before we were diagnosed.
This radical shift in our own personal diets sparked an adventure to learn as much as possible about nutrition-driven wellness. It’s what originally led Robby to help build the revolutionary Forks Over Knives empire and earn a master’s degree in public health. It’s also what inspired Cyrus to leave his job at the NASA Ames Research Center as a Stanford University–educated mechanical engineer to earn a PhD in nutritional biochemistry at the University of California, Berkeley. But the real magic was in realizing that we could take our unique insights, knowledge, and experience as people with diabetes and turn it into usable, relatable, and effective advice for other people living with all forms of diabetes, including type 1 diabetes, type 1.5 diabetes, type 2 diabetes, prediabetes, and gestational diabetes. That’s the ethos behind our coaching program, and it’s what lies at the foundation of this book.
Over time, we have fine-tuned the Mastering Diabetes Method into something that is truly unique. It encompasses the following four components:
Component 1: Low-Fat Plant-Based Whole-Food Nutrition. We encourage carbohydrate-rich whole foods, including fruits, starchy vegetables, legumes, and intact whole grains. As you will learn in this book, carbohydrate-rich food is not the enemy when you are living with diabetes, and we’ll provide you with the scientific rationale as to why eating fruit and starchy foods is actually an integral part of reversing insulin resistance and maximizing your longevity.
Component 2: Intermittent Fasting. Not eating is one of the most powerful ways to improve your insulin sensitivity, improve your cardiovascular health, lose weight, and actually increase your lifespan. You’ll learn about various intermittent fasting routines and ways to successfully integrate this time-tested and proven practice into your busy lifestyle.
Component 3: Daily Movement. Your body is designed for physical activity, and when you make daily movement a part of your lifestyle, you’re likely to dramatically improve your insulin sensitivity, your energy levels, and your mood. We’ll teach you how to move your body, how often to move your body, and how to combine movement with a low-fat plant-based whole-food diet for maximum effect.
Component 4: Decision Trees. We have created a specific tool that helps you address hour-by-hour decisions, look for patterns, and establish cause-and-effect relationships between your lifestyle choices and your blood glucose profile. The process of filling out decision trees helps you troubleshoot confusing everyday scenarios relating to oral medication use, insulin use, and blood glucose management. In addition, decision trees can help you address little-picture scenarios like managing your blood glucose before, during, and after exercise; safely reducing your use of oral medications and insulin as your insulin nsensitivity significantly increases; understanding why your fasting glucose might be higher than your post-meal glucose at times; dealing with post-meal blood glucose spikes and dips; and timing your insulin use to properly control your blood glucose after meals.
Furthermore, you’ll learn how to use and interpret important diabetes blood tests and how to incorporate various medicinal plants as alternatives to pharmaceutical medications. We’ll also answer such questions as: Should I exercise before or after a meal? Why does my blood glucose increase when I eat certain foods? and Do fruits really metabolize to sugar?
One aspect of the Mastering Diabetes Method that is very important to understand is that we welcome people with all forms of diabetes including type 1 diabetes, type 1.5 diabetes, type 2 diabetes, prediabetes, and gestational diabetes, because our collective struggles controlling blood glucose all originate from the same underlying condition: insulin resistance.
Even though we are diabetes experts, our understanding of diabetes does not originate from a traditional medical background and instead comes from personal experience, a PhD in nutritional biochemistry, a rigorous analysis of almost a hundred years of evidence-based scientific research, decades of repeatable results from our colleagues, our in-person retreats, and our work with thousands of people via our online coaching program. About the authors
Cyrus Khambatta, PhD earned a Bachelor of Science in Mechanical Engineering from Stanford University in 2003, worked at NASA Ames Research Center, then earned a PhD in Nutritional Biochemistry from the University of California at Berkeley in 2012. He is the co-author of many peer-reviewed scientific publications.
He is the co-founder of Mastering Diabetes and Amla Green, and is an internationally recognized nutrition and fitness coach who has been living with type 1 diabetes since 2002. He co-created the Mastering Diabetes Method to reverse insulin resistance in all forms of diabetes, and has helped more than 10,000 people improve their metabolic health using low-fat, plant-based, whole-food nutrition, intermittent fasting, and exercise.

When I met Cyrus at a wedding 4 years ago, I asked him what he did. He said something about “doing retreats, and coaching people with diabetes on what to eat to improve their diabetes and health.”
“Oh,” I said, “You must feed them some kind of low-carb, keto/paleo-type diet, right?”
He looked me right in the eye and said “Nope, on retreat they eat a LOT of fruit. Like, piles and piles of fruit the whole time.”
I just stared at him. “Uhhh, some kind of low-glycemic fruit?”
“Nope,” He replied, “any kind of fruit, bananas, dates, papaya, mangoes, veggies, and almost no fat.”
I was kind of bewildered and horrified, and figured he was a little off his rocker. I politely said, “Uhh, ok, nice to meet you,” and walked away thinking he was really weird.
At the time I was quite a devotee of a high meat, high fat, butter coffee, paleo- or keto-type diet, and had read a ton of books on it. I also have a degree in biology, and was sure that this was the best and most logical nutrition. Unfortunately, I didn’t actually feel great, didn’t have great energy, but I figured I just needed to do the low carb thing longer, be more strict with it.
A couple drinks later in the evening at the reception, my politeness was overcome by my curiosity. “Ok,” I said to Cyrus, “You feed diabetics piles of WHAT??” But then he explained, and my entire life changed. He explained to me, like he explains in this book, how the fats block the ability of the nutritious and high quality fruit sugar to get from the blood stream into the brain and muscles, and block up the ability of your insulin to do its job, so people require more and more insulin. He explained all of his research, all of the evidence, all of the trials. How he studied mice, and found that feeding the mice fats could make them diabetic, but feeding the mice just sugar never did. How the sugar spike in the bloodstream was a symptom, not a cause of any problems. He told me about the real “paleo” diet, and how we are descended from primates that thrive most eating eat high fruit, high carb, low fat diets. He told me about how great he felt when he started eating this way, how he never got sick with colds anymore. And he explained why I currently felt like crap eating piles of meat and butter coffee.
And I did feel like crap. If I was honest, I really didn’t ever feel very good. I was tired. All of the evidence he presented made enough sense that I tried it. I switched my entire diet, ate mostly raw fruits and veggies (including piles of fruit!), and kept my fats to 15% or less of my daily calories. And within DAYS my energy started to skyrocket, and was really steady. My head was clear, my body felt fantastic. I stopped drinking coffee because I just didn’t need it. I started running, just because it felt good. Within two months of that meeting, I started tapering off and was able to discontinue my postpartum depression medication that I had needed for almost two years.
Today is over four years later. And just like he described, ever since I changed my diet, I rarely get sick. My migraines went away. Skin issues went away. Even stretch marks from my first pregnancy suddenly disappeared. The depression never came back, even after I had my second child. I haven’t had a sinus infection since then either, which I used to get several every year. My energy is consistent and strong, even with small children and little sleep. I’m still eating piles of fruit every day, and I love reading about how to use fruits, veggies, potatoes and herbs to continually improve my health.
This information isn’t just for diabetics. Since not everyone has the luxury to meet Cyrus or Robby, I’m so glad everyone has access to this information now, and can cure their fruit/potato fear once and for all. Try eating piles of fruit with salad and steamed veggies and potatoes with basically no fat for a week, and just see how great you feel. Get your A1c tested, try this way of eating for a month, and test it again. The results are just so clear and easily measurable. Try it. I didn’t know my body could feel this good.
I attached a photo I took about 3 months after I met Cyrus, 2 years after the birth of our first child. I had never felt so good in my life.

“Nope,” He replied, “any kind of fruit, bananas, dates, papaya, mangoes, veggies, and almost no fat.”
I was kind of bewildered and horrified, and figured he was a little off his rocker. I politely said, “Uhh, ok, nice to meet you,” and walked away thinking he was really weird.
At the time I was quite a devotee of a high meat, high fat, butter coffee, paleo- or keto-type diet, and had read a ton of books on it. I also have a degree in biology, and was sure that this was the best and most logical nutrition. Unfortunately, I didn’t actually feel great, didn’t have great energy, but I figured I just needed to do the low carb thing longer, be more strict with it.
A couple drinks later in the evening at the reception, my politeness was overcome by my curiosity. “Ok,” I said to Cyrus, “You feed diabetics piles of WHAT??” But then he explained, and my entire life changed. He explained to me, like he explains in this book, how the fats block the ability of the nutritious and high quality fruit sugar to get from the blood stream into the brain and muscles, and block up the ability of your insulin to do its job, so people require more and more insulin. He explained all of his research, all of the evidence, all of the trials. How he studied mice, and found that feeding the mice fats could make them diabetic, but feeding the mice just sugar never did. How the sugar spike in the bloodstream was a symptom, not a cause of any problems. He told me about the real “paleo” diet, and how we are descended from primates that thrive most eating eat high fruit, high carb, low fat diets. He told me about how great he felt when he started eating this way, how he never got sick with colds anymore. And he explained why I currently felt like crap eating piles of meat and butter coffee.
And I did feel like crap. If I was honest, I really didn’t ever feel very good. I was tired. All of the evidence he presented made enough sense that I tried it. I switched my entire diet, ate mostly raw fruits and veggies (including piles of fruit!), and kept my fats to 15% or less of my daily calories. And within DAYS my energy started to skyrocket, and was really steady. My head was clear, my body felt fantastic. I stopped drinking coffee because I just didn’t need it. I started running, just because it felt good. Within two months of that meeting, I started tapering off and was able to discontinue my postpartum depression medication that I had needed for almost two years.
Today is over four years later. And just like he described, ever since I changed my diet, I rarely get sick. My migraines went away. Skin issues went away. Even stretch marks from my first pregnancy suddenly disappeared. The depression never came back, even after I had my second child. I haven’t had a sinus infection since then either, which I used to get several every year. My energy is consistent and strong, even with small children and little sleep. I’m still eating piles of fruit every day, and I love reading about how to use fruits, veggies, potatoes and herbs to continually improve my health.
This information isn’t just for diabetics. Since not everyone has the luxury to meet Cyrus or Robby, I’m so glad everyone has access to this information now, and can cure their fruit/potato fear once and for all. Try eating piles of fruit with salad and steamed veggies and potatoes with basically no fat for a week, and just see how great you feel. Get your A1c tested, try this way of eating for a month, and test it again. The results are just so clear and easily measurable. Try it. I didn’t know my body could feel this good.

I picked up Cyrus Khambatta and Robby Barbaro’s book, Mastering Diabetes: The Revolutionary Method to Reverse Insulin Resistance Permanently in Type 1, Type 1.5, Type 2, Prediabetes, and Gestational Diabetes. With a forward by Neal Barnard – who has written a book on reversing diabetes.
The first five chapters introduce the authors – who are both diabetics, and they explain what insulin resistance is and what it is in relation to the intwined diseases. They conclude that animal produces are a major detrimental health factor in insulin resistance.
Each chapter has shaded boxes with further explanations, charts and diagrams to help with understanding, anecdotal stories, and a bullet-point “take-home messages” page with the link to what amount to thousands of scientific papers referenced to back up their argument.
Beginning in chapter eight, they introduce their “Mastering Diabetes Method,” and they introduce the concepts of green light, yellow light, and red light foods – designating how much is allowed. The encourage the reader to write down specific goals and to plan out weekly menus.
In the nineth chapter, they write about the need to be monitored by a doctor and the tests that are most important to see how you are progressing. The also explain how to use a “decision tree” in making healthful decisions.
Chapter ten begins with a questionnaire about your weight and eating habits, which determines which of two breakfast types you should begin with. If you score low on the scale, they start you off with a fruit bowl for breakfast. If you score in the top 75% of their questionnaire, they start you with a high fiber breakfast for two to four weeks and then switch you to the fruit bowl.
Lunches are vegetables, grains, and beans. They discuss calorie density and how that works – and they illustrate several comparisons of this food versus this food for calorie density. And they explain batch prepping.
Dinners are salads with vegetables.
Chapter thirteen looks at the benefits of intermittent fasting and offers several patterns, with 16:8 being the most frequently adapted. (16 hours a day fasting.)
Fourteen looks at the benefits of exercising.
Chapter fifteen has suggested meal plans and sample recipes.
Appendix A explains C-Peptide testing.
Appendix B lists the green, yellow, and red foods.
Appendix C looks at the use of decision tree.
The book ends with a lengthy index.
This is an excellent book for anyone looking to reduce their insulin resistance and/or reverse any of these diseases. It is science-based – with thousands of papers referenced. It is clear – with explanation, charts, illustrations, summaries, and anecdotes. It is an extensive, useful, and helpful guide.
Their meal plan reminds me of the first book I ever read on what is now called Whole-Food, Plant-Based diet – that being the Diamond’s, Fit for Life. Their reliance on scientific papers reminds me of Dr. Gregor’s work.
I am continuing to tweak my diet and lifestyle with sarcoidosis and prednisone, and this book with be a help in getting healthier.

I was super excited to read this book, having followed the authors on social media for a long term.
Whilst in principle, this is a great book, I do warn of the lack of scientific evidence on this diet. Whilst there are lots of anecdotal reviews from successful people, there aren’t any clinical trials using this protocol that prove its hypothesis. This is a shame as then it just becomes ANOTHER diet.
As we know that weight loss, or in particular fat loss from the vital organs is the predominately best focus for T2Diabetics to focus their efforts on and this can be achieved with almost any diet, making this diet quite extreme in its nature.
Unlimited low fat carbohydrates and low protein is just a calories deficit and removal of processed foods. How is that achievable long term? Eating out and socially becomes very difficult. What about the long term effects of low protein diets, the lack of variety, it’s a very limiting diet which science shows isn’t the best practice for long term goals.
So in summary. A plant based diet is a good diet, but with a lack of long term clinical trials the extreme nature of making it low fat, this feels like a short term diet than a long term solution for most people.
I also feel a book that doesn’t mention “visceral fat” in the context of diabetes is not 100% “evidence based”.
More research needed.
