I was worried about doing the flip onto the plate, but everything released beautifully and kept its shape, and nothing went flying. The recipe that came with the pan (through Williams-Sonoma) was perfect, except I added a step of putting the apples into a bowl of water with lemon juice so they wouldn't brown while I was doing all the cutting and peeling. An OXO apple corer was a great help in speeding up the process and giving me uniform slices after I peeled the apples.)
After seeing how easy this was I can't imagine using any other pan for tarte Tatin, but I have always loved using copper, whether tin-lined or stainless-lined. It just heats up and cools down very qucikly. Even using All-Clad is maddeningly slow and unresponsive after using copper all these years, and copper is so easy to clean whereas All-Clad always has spots (hard water spots, I guess) on it after using it.
For the more budget conscious the Silverwood Tarte Tatin Dish 8" and Alan Silverwood 11 x 2" Tarte Tart Tatin dish Pan 22313 work very well too and are very easy to do the required flip without much worry because they have a wide lip at the top edge and you can press down flat and hard on the pan and then flip over the sink away from you (to avoid any flying hot liquid). Having used both Mauviel and these now I like them both, but the copper's advantage is only in the looks department compared to the inexpensive ones from Silverwood.
