The only reason why I have more De Buyer pieces than Mauviel is the price point. I didn’t want 1.5mm think copper. I wanted to feel the difference but I’m not buying these for professional use. So for me, 2mm was the sweet spot (not 1.5 or 2.5mm). I also like the stainless steel handles because they stay cool as the pan heats up. Mauviel’s M250S line (the one with 2.5mm copper and stainless steel handles); however, is hard to come by these days, the paella pan especially. So there’s my compromise. Either way, these pots and pans are truly beautiful workhorses you can expect to cherish for the rest of your life.
It's great for Paella, but also very convenient when I need to sauté a large batch of vegetables for a stew, make an extra large egg scramble or omelet, stir fry, or make French toast for the whole family. So it easily doubles as an extra large frying pan (or wok), spreading the heat evenly and cooking food nicely. It's not as heavy as one might expect for the large cooking surface that it provides, and it it looks gorgeous hanging in the kitchen. I originally thought that it was a bit pricey , but now I am convinced that it was money very well spent.
Note that because steel is different from Teflon, enjoying the non-stock properties requires adjusting the way one fries food. You must first take time to heat the pan, so that the heat is distributed over the whole surface, and then add the food to be fried. Used properly, the pan performs admirably.
