RAHM FAMA grew up on a ranch in Santa Fe and cooked his way through Austin, Phoenix, Scottsdale, New York, Colorado Springs, and St. Lucia, and most recently was the executive chef of The Lodge at Vail. He is the corporate chef at US Foods, the nation’s leading food distributor, and he regularly teaches cooking classes. Rahm was the host of Food Network’s primetime show Meat & Potatoes. He lives in Southern California.

I was having a movies under the stars evening and wanted to make this an easy entertainment. I made the Pork Adovada. I chose to use the Tequila-Lime Jicama slaw from the previous recipe. Serving everything as build your own soft tacos, people when crazy over the delicious flavors. Top with a little sour cream and avocado and you have heaven in your hands. We served a temperanillo rose, a rich viognier and of course Reposado tequila shots!
Living in a wine region and having winemakers as friends, it takes some very special dishes to get them very excited. Now this was a spicy handful that got rave reviews from everyone who attended. In fact, I'm hosting another evening in a few weeks and everyone requested more dishes from Meat & Potatoes.
He thought it would pretty simple recipes but some are a little more than 'basic level'.
Overall, I like the recipes and the fact that I dont have to spend HOURS. In the kitchen to make the meals.
When I opened the book to the first recipe combination that included kimchi, I was happy! Meat and Potatoes includes recipes for smoked paprika parsnip fries, "mushroom" (shaped) potatoes chimichurri, pastrami flank steak, braised short ribs with ginger port risotto, cambozola barley risotto, sesame brown rice cakes, curry pear slaw, white pepper-crusted rack of lamb with creamy truffle pistachio potatoes and dozens of more great twists on meat and potatoes. There is even a chapter on game as well.
Tonight I made the pistachio crusted pork Milanese and again I was impressed. The chops were incredibly flavorful and moist. So easy and delicious with perfect instructions. I also made the coconut risotto - really unique and tasty.
This past weekend I had a peanut satay chicken with a pickled cucumber and red onion condiment on the side and it was fantastic - I think the banh mi pork with peanut butter and cucumber salad will be made very soon from this book as well as the waffle fried chicken with maple bacon collards. On Andrew's birthday I made waffle battered chicken tenders and they were fantastic - I am anxious to try Fama's recipe. I am looking forward to making a great deal of Fama's recipes.
I am happy I chose this book from Blogging for Books. I will be using it a great deal to up my meat and potatoes game.
I'm editing this to include a note -- yes, the cover isn't beautiful - but I don't have a problem with the quality of the printed materials - inside the photographs are beautiful - and it's a paperback - I do prefer hardback - but I'm not going to miss out on tons of incredible recipes because of that.
Which is not to say that I dislike meat...I love a good steak. Or a grilled veal chop. And bacon is still my friend....
However, changing the frequency of eating meat has elevated its place. I expect more from the experience, I want it be special.
Which is a perfect way to think about meat's place in our health conscious diet.
And luckily for us, Rahm Fama's cookbook: MEAT AND POTATOES meets that criteria with flying colors.
Fama has created a cookbook of menus in which he takes familiar meat based dishes, puts a tasty twist on their preparation and then pares them with unique side dishes that will have you reaching for this cookbook the next time you want to impress your family with the comfort of meat and potatoes, but with healthy, taste-forward combinations.
Here's a couple menu combinations from MEAT AND POTATOES that I liked:
Five-spice (slow cooker )BBQ Pulled Pork
Seasame Brown Rice Cakes
Curry Pear Slaw
Using a slow cooker is my favorite way to prepare pulled pork...Fama's recipe gives turns the usual BBQ flavors on their head with the use of Hoisin sauce, balsamic vinegar, and pineapple juice.
I also think that adding pear to slaw is inspired.
Waffle Fried Chicken
A fun way to combine the popular waffle and fried chicken flavor combination. And as a big fan of collard greens, I can't wait to try Fama's recipe for collards with maple and bacon.
In all, this is going to be my new go-to cookbook for the special days when I add meat into my diet.
