A sample bite from the book: Herb-Roasted Whole Chicken
Preheat the oven to 400°F. Place a rack inside a large roasting pan.
Rub the olive oil all over the chicken. As you do, gently loosen the skin over the breast to form a pocket.
Slide half of the rosemary and thyme sprigs underneath the skin over the breast, and put the sage leaves, bay leaf, and remaining sprigs inside the cavity.
Rub with the lemon juice and season with salt and pepper.
Roast until an instant-read thermometer inserted into the thigh registers 165°F, 50 to 60 minutes. Remove from the oven and allow to rest for 10 minutes before carving.
- 1 (3- to 3½-pound) roasting chicken
- 1 tablespoon extra-virgin olive oil
- 4 rosemary sprigs
- 6 thyme sprigs
- 4 fresh sage leaves
- 1 bay leaf
- 1 teaspoon freshly squeezed lemon juice
- 1 teaspoon salt, ½ teaspoon freshly ground black pepper

Easy enough my hubby does all the cooking now. Yes, he does but only because I am too sick to stand long enough to do it.
One day hubby told me he was running out of ideas for meals. I expected it because he cookS much like his mother and that was definitely not how I learned to cook or to eat.~. I am diabetic, on blood thinner, have cholesterol issues, liver and gallbladder issues I could list all the rest but, MeH. (These and the rest of my heath issues are gentic, not due to my eating habits.)
This cookbook has half of what you need for living healthy.. The rest of the way isn't about food, it is about your mind. I suggest Cognitive Behavioral Therapy for the rest of theformula for a healthy life. I hope you didn't get the short stick on the genetic scale, it sucks~
