I'll preface by saying that I am an avid cook and have used my fair share of knives.
These knives are very light. On a scale of sharpness I would rate them a 7/10. They are sharp, but not razor sharp. They are weighted just well enough that they have the correct balance of weight from the handle to the actual blade. The grip is also quite nice.
As mentioned by someone else, they don't fit all that flush in the stand. In fact I wasn't even sure I had them in the correct order cause they were jiggling around a bit. The stand is completely plastic. It looks pretty cool, but the stand could use some more work honestly. It is fairly sturdy, I've tried tipping it over and you won't be able to do so without some effort.
In terms of cutting, they perform pretty well, definitely better than your average knife set, but not as well as your very expensive set (to be expected). I don't have a cheese wire cutter, so I use the small knife to slice cheese, and it slices off a block with relative ease, which is a good indication of how sharp it is. A dull knife will simply smash your cheese block. Slicing off an apple is also extremely easy and precise. I am able to get very thin pieces of apple given how sharp these are. Cutting cooked chicken breast was not as easy as I would have liked however.
I have left these in the sink with food on them for a day or two and after cleaning they look brand new. No concerns about staining or anything else, just as advertised.
My only concern is longevity.Read more ›
My only note is that the knives don't fit snugly in the stand like you might find with a wooden block. This is fine as long as they are placed in a low-traffic area, but I imagine this might be a concern for households with younger children.
Update: I have used these knives semi-regularly for the past 5 months. While I don't use them every day and I am not in any way a professional, I could not be more impressed with this set. I saw another review about the wooden handles breaking, and to that I can not comment as I purchased the set with the black rubberized handles. Overall, I love these knives, and am strongly considering buying one of the larger sets. The only thing I miss with these is a serrated knife for breads and such (not certain if serration is even an option for ceramic knives.)
Update: I now have two knives that have broken. One while cutting brussels sprouts on a thick acrylic cutting board. Seriously? Several of these knives also now have staining on the ceramic blade portion near the handle. I've lost my fascination. Our next sets will be steel... Will have to replace these soon as the one has a half-dime size chip taken out of it from the sprouts.
A couple days ago, I was cutting onions and the chef knife handle split in half. Although the blades seem to be of decent quality, it would appear the wood handles are not. Would not recommend for people who cut things like onions, or cheese. I rated this 5 stars before but now I'm going to give it 2 stars. For the price, I guess this is what you would expect. I've had this knife set for about 2 months before this happened.
