What are sharpening stones used for?
There are two ways to sharpen a dull blade: with an electric sharpener or with traditional sharpening stones. A honing steel is often mistaken to be a sharpening tool when it is actually used to maintain the edge of a knife that has already been sharpened. Mercer Culinary sharpening stones are a cost-effective way to sharpen dull knives quickly and easily. They are a necessity for professional chefs and home cooks.
They are versatile and easy to use
Mercer Culinary sharpening stones have a course and fine side. The tan and white stone (400-1000) is a course-medium stone for sharpening very dull blades. The blue and white stone (1000-3000) is a medium-extra fine stone that's most often used to maintain the edge of knives that are used frequently. To sharpen a dull blade, begin with the 400 grit stone and progress to the 3000 grit stone for a razor-sharp edge on any knife.
How to get a razor-sharp edge
Before using the stone, soak it in water for five minutes and place in the silicone tray. It's important to hold the knife at a 20° angle and drag the edge of the blade across the stone, beginning at the heel and finishing at the tip. Reverse and repeat, alternating each stroke to keep the beveled edge on center. Add water when needed to lubricate the stone while sharpening. Rinse clean when finished and pat dry.

A note about the grit. 1000/3000 is a good combination for kitchen knives. You can get a finer edge with say 6k-8k, but that fine edge will dull more quickly. 3000 is adequate enough for a safely sharp blade that keeps it's edge for much longer.
