Care and handling of Genesis cutlery.
The performance of a knife can be diminished if not cared for properly.
Cutlery should never be washed in a dishwasher because intense heat and harsh detergents may cause the handle to deteriorate. Carefully wash by hand with soap and warm water, rinse and dry with a soft towel. Do not soak or submerge in water for long periods of time or use chlorine bleach because it can pit and discolor the blade. Avoid soaking in aluminum or stainless steel sinks because these metals may cause pitting on the blade.
Store in a cutlery block or sheath to preserve the cutting edges and prevent injuries.

An Eastern-style chef's knife, the Genesis 7-inch santoku slices with power and minces with precision. Rectangular in shape, it features a series of ground shallows called a Granton edge to create tiny air pockets, allowing thin slices to release easily from the blade. First, a 10 inch Chef knife is a little long for many individuals. The 8 inch is more all-around. That said, the 10 inch comes in very handy for preparing larger and thicker vegetables, meats, so forth.
The 10 inch is weighted toward the blade. The knife cannot help this as the longer blade will greatly exceed the handle in mass. This knife tries to compensate for this by using a slightly thinner blade. This helps, but the blade still weighs the knife forward in the hand.
By thinning the blade slightly, this knife is a dream for prep and slicing. The metal is typical German quality. The edge will hold up well.
Do not use this knife to chop through hard bone, husks or rinds as you will be overusing this knife. Use a cleaver or heavy bladed knife for these.
Oh, the short bolster part of this knife sold me on it. I like a knife that can slice along its entire blade length. I like to sharpen my knives which I find easier with the short bolster. I find a full bolster knife more technically difficult to use and sharpen.
Overall, the price of the Mercer is outstanding for the value you receive. This is a lifetime and pass it on to another generation knife.
My one concern with this knife is how well the handle will hold up. I've never had a knife with a “Stantoprene” handle (whatever that is) so I have no idea of it's durability. My other knives have wooden handles with 3 rivets in each and have lasted for over 30 years. If this knife lasts only one third as long it will still turn out to be the best value of the group.
I wish it came with a sheath, but because it didn't have a sheath so I had to make one, which was a new learning experience.
For the money, this knife is a good value.
