Care and handling of Genesis cutlery.
The performance of a knife can be diminished if not cared for properly.
Cutlery should never be washed in a dishwasher because intense heat and harsh detergents may cause the handle to deteriorate. Carefully wash by hand with soap and warm water, rinse and dry with a soft towel. Do not soak or submerge in water for long periods of time or use chlorine bleach because it can pit and discolor the blade. Avoid soaking in aluminum or stainless steel sinks because these metals may cause pitting on the blade.
Store in a cutlery block or sheath to preserve the cutting edges and prevent injuries.

Last evening I was cutting a backbone out of a chicken that I had half-a@@ed defrosted. My poultry shears were not helping much largely as the inside was frozen with the giblets so there was no underneath to easily access. Pulled out the chinese clever. Nope (leverage issue). I'm not sure what made me grab this knife, but I did. It made short order of the backbone removal--and frankly, I was astonished. Accordingly, I write a review.
This knife is well-crafted, sharp, strong with just enough flex, and well balanced. The handle sticks in your hand (a chicken wet work is where one would appreciate such) and is comfortable. Though I used it for a purpose for which it was not intended, it turned out to be the right tool for the job where a longer blade was simply not going to work.
I also caveat that kitchen knives, like carpenter's tools, are an extremely personal thing. To my hand and to my tastes, I'm going to enjoy using this knife for many, many years.
P. S. 04/17/16 I have been using this knife to slash my french bread loaves....it is that sharp. I love this knife.
This thing came out of the box sharp as a straight razor.
I filleted a fish with it, I ninja'd my way through various fruit. I'm pretty sure I could carve an intricate image of the mona lisa into the side of a papaya, if I felt like it.
It is truly magical.

[Update] I've been using this knife for about 6 months, and I still love it! It keeps its edge well (under my moderate use), and is now my go-to knife for most things.
Culinary Genesis 3.5-Inch Paring Knife: The overall weight and balance feels good, handle feel is secure and size is about right, blade is very sharp, holds an edge reasonably well, does not rust (I only hand wash) etcetera as you would expect for a decent knife.
One of the best things about this Genesis knife is the handle material and shape, it is very comfortable with no hard edges and importantly is just as grippy when wet as when dry. I can handle this safely in any condition. It also appears to be very durable, but only time will tell how this holds up long term.

We've been using the Paring knife for light use at least a few times a week for the past two years. It's still working as good as new, and the handle material is holding up perfectly well - it is just as grippy as its always been with almost no signs of wear. This handle material is simply amazing, it's even has good grip when soapy which is great to avoid accidents during washing. I even tried cutting things with a soapy handle and had no problems. I've bought a couple of other Genesis knives and they are all equally great, however this paring knife was the first and gets the most use and serves as the best indicator for long term durability.

I've only had it a week so far but out of the package it is amazing. Look how thin the slice of saucisson is! I'll update this review in the future about how often and how easy/hard it is to keep a sharp edge on the blade.
I use it multiple evenings a week and so far have not noticed a reduction in sharpness yet, though I have also purchased a whetstone for when I do need to touch it up.
One caveat is that I did not realise how long 10 inches is. The blade is incredibly long and if you aren't used to having longer blades I would suggest the more standard 8 inch edition.
