If your clicking around on amazon trying to find professional knives but aren't rich, ALWAYS GO MERCER! I'm a cook and have used knives from wal-mart status... to knives that your afraid to use because the price was so high. Then here comes mercer. They make amazing knives that are so sharp and quality.. I mean you can use and abuse these things and they will still slice through anything you put in front of them. Also, if your planning on useing knives for hours a week, mercer puts alot of research into designing very comfortable knifes with amazing balance. This knife right here (I own it b.t.w.) feels like it should cost about 60 dollars... but was a 1/4 of that. You can take this onto a professional kitchen and not get laughed at, anyone who knows their stuff knows mercer is the best value for a seiously professional knife

this thing will last you 10 years easy if you take care of it! dont waste you money thinking this is cheap, therefore not good. This is better than an equal knife that will cost you 40 bucks! (i wont name names)

I work in culinary so I am constantly looking for knives. Brands and shapes. I bought three of these Mercer knives to give them a try. I have never heard of this brand before. They are great. Sharp and sturdy and hold an edge. I definiely will buy some more in the future. I am very happy with them.

Size: 14-Inch Granton-Edge Slicer KnifeColor: Black Verified Purchase
I like Mercer. They pick nice steel. This is a good stain resistant that is still as sharp as you need for delicate slicing. It is pretty sharp out of the package. But I still took it to my Japanese knife store to do a brilliant waterstone polish to it. The Japanese make a fine alloy that allows for a thin blade.

The 14 inches may sound excessive since it is not so easy to fit with the rest of your knives. But it makes good, long, pressure free runs across roasts. You may consider getting the 14 inch blade guard for slim blades available on Amazon.

The scalloping pretty much eliminates slices sticking to the blade. The handle is a tuff food safe one, but still should not go in the dish washer. I also use a long ceramic wand to tune it up between sharpenings.

The budget price might make this a best buy.

i am a professional cook and i cut bread hundreds of times a day, 8-12 hours a day, 5-7 days a week. i cut crusty breads, soft breads, i cut very thin crostini, i cut chunks of focaccia, i cut them hot or cold, often very fast. this knife has a decent heft but isnt so heavy that i get fatigue even after hour 9 working at a fast pace. the blade is thick enough not to be too flexible, and with care i have learned to avoid the unintentionally slanted cuts that a knife with a thicker spine can sometimes produce. for the amount of bread i cut, i prefer this heavier duty style, as i know i wont bend or dent it, & i sometimes also use it for rough work like trimming the tough skin off a huge 'leg' of prosciutto, or as a kind of tough wedge for roughly cutting apart a huge wheel of cheese or whole melon, which i do by pushing it through more than sawing. the knife came quite sharp and can bite into all crusts well, often requiring less than one stroke to cleanly produce delicate, non-torn up slices of baguettes or pugliese. the handle is comfortably soft and ergonomically shaped, and cleans and sanitizes easily. the size feels perfect as i can manage large loafs or the occasional huge cheese wheel or watermelon well but its not too long or heavy to feel cumbersome with small baguettes, etc. i would recommend Never putting a good knife through a dishwasher, but washing this at the end of a sometimes ten hour shift with warm soapy water and towel-drying it is easy and effective. i looked at and experimented by working with many bread knives before purchasing this one and i recommend it to anyone who wants a high quality bread knife that can sometimes sub in for a few extra purposes that its not important or prudent to use your good chefs knife for.Read more ›

Size: 3.5-Inch Paring KnifeColor: Black Verified Purchase
I could write a page or more just about how excellent Mercer knives are (I own two, a Mercer Millenia 10" chef, this paring knife, along with a Shun chef knife, a Wurstof chef and paring and slicer), I could write another page on how excellent most stamped blades are over forged blades, due to the low cost and thinness and 17 degree angle of bevel and how that allows them to cut so amazingly (check out the Victorinox Classic line as well). I will just put it this way, if you are all about ego and looks, and have a hundred or more to blow on a paring knife...by all means buy a Global, Shun or Wurstoff. However, if you want a paring knife that is razor (and I literally mean razor, it will shave your hair off your arm) sharp with a grippy (two different plastics) comfortable handle that allows you to use it for hours at a time...buy this knife. This is the knife I grab for when doing any quick basic cutting in the kitchen, opening plastic around bottle tops, cutting packaging on food, cutting cheese or butter, or super thin slices of cucumber or getting into tough areas on bones...it's a razor but has a very protective handle that does not slip. I have recommended it over other paring knives to many of my home cook friends and though they are not at first attracted by the looks, they all can be found in daily use when I go over to their houses. I also have a paring knife from Wurstof, that i found was just not sharp enough because of the bevel of the grind, not bad but this is much, better. I also like how this handle protects your knuckle a bit and puts the hand up above the blade a bit, something much more pronounced when you look at the Mercer Millennia Chef knife...Read more ›
